Heat olive oil in pan, sauté onion and garlic until softened, about 1 minute.
Step 2
Add zucchini and potato chunks, pour stock to cover vegetables. Bring to boil, simmer until vegetables are soft, about 10 minutes, then add in the omega oil.
Step 3
Transfer to high-powered blender and blend to your preferred consistency, about 1 minute.
