This butter chicken recipe is the best you will ever make and definitely better than any restaurant take out. Made with boneless chicken, yogurt, and easy to find spices, and done in just 20 minutes. Serve it over steam rice for a quick lunch or dinner.

Butter Chicken in 20 minutes

lb Chicken (thighs

Greek yogurt

tbsp Garlic (grated)

tbsp Ginger (grated)

Lemon juice

Cooking oil

tbsp Ghee (or butter)

tbsp Tomato paste

Salt

tsp Black pepper

tsp Turmeric powder

Coriander powder

Cumin powder

tsp Garam masala

tsp Paprika (hot

Cardamom pods

Cinnamon stick

Black cardamom ((optional))

Bay leaves

Curry leaves ((optional))

In a glass or stainless mixing bowl, combine the yogurt, all the spices, ginger, garlic, and lemon juice. Combine well.

You can leave this to marinate for 15 minutes on the counter up to 12 hours in the refrigerator.

In a skillet or saute pan, add oil and ghee.

Add the whole spices – saute 30 seconds.

Then, add the chicken with marinade.

Stir fry for 2 minutes on medium-high.

Then, add the tomato paste – combine well.

Cover and cook for 15 minutes.

Open pan, taste and adjust seasoning.

Garnish with cilantro leaves.

Server over steamed rice, chapati or naan.

Black Bean and Zucchini Rice Skillet is a low cost, easy and vegetarian meal.  It&#039;s a win-win-win!

Black Bean and Zuchinni Rice Skillet

olive oil

zucchini,

onion, chopped

bell pepper, diced

15 oz can black beans, rinsed and drained

14.5 oz can petite diced tomatoes

water ((or vegetable or chicken broth))

garlic powder

oregano

thyme

Cheddar cheese

salt and pepper (to taste)

Heat oil in a large skillet and sauté onions, peppers and zucchini for about 5 mins.

Add drained beans, undrained tomatoes, water and seasonings.  Bring to a boil.

Add in rice and stir well.  Cover and cook on the lowest heat setting possible for 7 mins.  Stir half way through to prevent rice burning on the bottom.

Once rice is soft, sprinkle with cheese and cover until cheese is melted.  Salt and pepper individual servings to taste.

Turmeric Rice with Chicken and Peas

0.5 lb Chicken (boneless)

Rice (basmati)

Onions (chopped)

tsp Garlic (minced)

Curry powder

Turmeric powder

Green peas (frozen)

tbsp Oil (cooking)

herbs (fresh cilantro

Chicken stock

Pepper

Clean, wash and soak rice for 30 minutes – Drain and set aside.

Cut the chicken into large pieces about 6 inches

Season the chicken with salt, pepper, and curry powder – set aside.

In a skillet, add a tbsp oil

Add the chicken pieces, cook on each side for 2 minutes on medium-high heat. Remove and set aside.

To the same skillet, add remaining oil, saute onions until translucent.

Add the garlic and turmeric powder,

Then, add the drained rice, toast it for 2 minutes.

Add the peas and herbs.

Season with salt and pepper.

Then add the chicken stock. Stir to combine

Return the chicken back to the pan.

Let come to a boil.

Lower the heat to an absolute simmer (low)

Cover the pan and let cook on low for 15 minutes

After 15 minutes, turn the heat off. If possible let cool for 10 minutes

Open, fluff the rice with a fork

Serve.
