this quick beef stir-fry with onion, fresh chili, and Thai basil under 20 minutes. The burst of flavor will let you experience authentic Thai cuisine. Perfect for a busy weeknight dinner.

Quick Thai Beef and Basil Stir-Fry

lb beef sirloin

onion

Thai basil leaves

grape seed or canola oil

Thai bird's eye chilies (finely chopped)

garlic (finely chopped)

tbsp Thai fish sauce

tbsp oyster sauce

tsp sugar

water

In a small bowl, combine fish sauce, oyster sauce, sugar and water. Mix well and set aside.

Heat 1 tbsp oil in a wok (or skillet) over med-high heat and add garlic and chilies. Stir-fry for 10 seconds, then add the beef. Stir-fry until the beef is no longer in pink, about 2 minutes. Transfer the beef to a plate and set aside.

Add the remaining 1 tablespoon oil to the wok. Add the onion and the sauce. Stir-fry for 1-2 minutes until the onions are just soft.

Add the beef and heat through. Add the basil leaves and remove the wok from the heat and shake everything to mix well. Serve immediately with jasmin rice.

Jimmy Buffett Cheeseburger Pasta Salad

oz whole wheat pasta (I used fusilli)

olive oil

yellow onion, chopped

garlic cloves, chopped

salt and pepper

beef

cherry tomatoes, chopped

red onion, chopped

pickles, chopped

lettuce, shredded

cheddar cheese, shredded

mayo

ketchup

tsp salt

Boil pasta according to package instructions.

While the pasta is boiling, add olive oil and chopped onions to a medium-sized skillet and cook for 3-4 minutes, until onions become translucent. Add the garlic and cook for 1 minute more. Transfer to a small bowl and set aside.

In the same pan, brown the ground beef over medium heat. Drain the cooking fat from pan, and add the onions and garlic back to the pan. Heat for an additional 1-2 minutes.

Add the pasta and ground beef mixture to a large bowl.

Add the chopped tomatoes, red onion, pickles and lettuce to the pasta.

Make the paradise island dressing by combining the mayo, ketchup, and salt. Stir well to combine.

Add about ¼ cup of the dressing to the salad (save the rest for using on burgers!). Toss well to evenly coat the pasta.

Toss the pasta with shredded cheese.

Serve immediately.

milliliters (1/4 cup) soy sauce

5-ingredient spaghetti all'Amatriciana recipe

dried spaghetti pasta

milliliters (1 cup) cold water

speck,

btl tomato passata

parmesan, (optional)

Step 1

Put the kettle on to boil. Pour the boiling water from the kettle into a large saucepan over high heat and return to the boil. Season well with salt (the water needs to be as salty as the sea). Put another kettle on.

Step 2

Add a second kettle of boiling water to the pan. Add the pasta and cold water. Cook the pasta for 2 minutes less than it says on the packet or until just al dente. Drain, reserving 125ml (1/2 cup) of the pasta water. Return the pasta to the pan.

Step 3

Meanwhile, heat a large non-stick frying pan over medium-high heat. Add the speck and cook, stirring, for 5-6 minutes or until golden and the fat has rendered. Use a slotted spoon to transfer the speck to a plate lined with paper towel. Remove all but 1 tbsp of the cooking fat from the pan. Heat the fat in the pan over medium heat. Add the garlic and cook, stirring, for 30 seconds or until softened but not brown. Add the passata and cook, stirring, for 3 minutes or until heated through. Season.

Step 4

Add the reserved pasta water to the tomato passata mixture and stir to combine. Add to the pasta and toss until well combined. Divide among serving bowls. Top with speck and sprinkle with parmesan (if using) and freshly ground black pepper, to serve.
