Healthy 4-Ingredient Cookies with chocolate chips made with just banana, oats, peanut butter for a quick and healthy snack or sweet treat. Vegan and gluten-free!

4 Ingredient Cookies

bananas, (mashed)

old fashioned oats

peanut butter

chocolate chips, (or mix-ins of choice)

Preheat the oven to 350F. Line a baking sheet with parchment paper and set aside.

Mash the bananas and combine them with the oats and peanut butter in a large mixing bowl. Mix well.  Fold in chocolate chips.

Drop bite-sized spoonfuls onto the prepared baking sheet and bake for 10-12 minutes. Until lightly brown. Let the cookies cool 5 minutes on the baking sheet before transferring them to a wire cooling rack.

Store uneaten cooking in an airtight container at room temperature for up to 5 days.

These flourless peanut butter cookies only take one bowl and are a breeze to whip up. Their ultra-rich flavor makes them perfect for peanut butter lovers!

4 Ingredient Peanut Butter Cookies

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper, then set aside.

Using a stand mixer (or hand mixer + large bowl), whip together granulated sugar, peanut butter, egg, and vanilla extract until thoroughly combined, about 8-10 minutes. Batter will be a little crumbly; this is okay.

Using a 1 tablespoon cookie scoop, scoop out dough and roll it between your hands. Place cookie ball on prepared baking sheet. Use a fork to gently press a criss-cross pattern in the dough (see above video for example.) Repeat this step until all dough is used, placing cookies about 2 inches apart on the baking sheet. 

Bake cookies for about 10 to 12 minutes or until cookies have dried and are no longer as shiny. Note that cookies will not expand or grow as much while baking; this is okay.

Let cookies rest on the baking sheet for 5-10 minutes, then transfer to a wire cooling rack to cool completely.

You can watch the video in the post for visual instructions.First, combine the oats and flax seeds in an electric coffee or spice grinder (or a small blender) and process until floury.

Transfer them to a medium mixing bowl with the remaining ingredients and use a spatula, then your hands, to stir/mix the dough until smooth.If the dough is too dry, add more water, one teaspoon at a time.

Divide the dough into 9 small balls, flatten them into cookie shapes, and transfer them to a parchment paper-lined baking sheet. At the same time, preheat the oven to 350 °F (175 °C).

Spread your toppings of choice over the cookies, then transfer the tray to the oven and bake for 8-10 minutes, or until the cookies are lightly golden brown around the edges. Leave them to cool for a short while, then enjoy!

I am making my second batch of these super simple yummy cookies and thinking ahead to when my grandsons might visit - I want to be prepared sooooo
1. I will make an extra batch to freeze AND
2. I will assemble all dry ingredients in a jar with toppings and wet ingredients on separate jars - ready to bake at a moment's notice.

OMGoodness what a super cookie and SUPER simple.
My grandsons love to cook with me - they know there is always something yummy to eat at the end of it.
