With marinated tuna, brown rice, avocado, cucumber, mango, macadamias and scallions, this Hawaiian style quick Ahi Poke Bowl is perfect for hot summer nights.

Ahi Poke Bowl

tuna

white onion

scallions

soy sauce or gluten-free tamari

sesame oil

sriracha

mango

Hass avocado (4 ounces)

cucumber

jalapeno (to taste)

brown rice

Macadamia nuts

sesame seeds

Lime wedges (for serving)

Sriracha (for serving (optional))

In a medium bowl, combine tuna with onion, scallions, soy sauce, sesame oil and sriracha.

Gently toss to combine and set aside while you prepare the bowls.

Peel, seed and cube the mango and avocado.  Peel, halve, seed and thinly slice the cucumber.  Thinly slice the jalapeno and scallions.

In 2 bowls, layer 1/2 the rice, 1/2 the tuna, mango, avocado, cucumber, jalapeno and scallions.

Top with Macadamia nuts and sesame seeds and serve with lime wedges and extra sauce on the side, if desired.

How To Make a Poke Bowl

This Ahi Poke Bowl is a Hawaiian-inspired recipe with marinated tuna, sushi rice, avocado and seaweed that tastes just like the takeout dish!

The Easiest 30-Minute Ahi Poke Bowl

tuna steak,

tbsp soy sauce

tsp sesame oil

lime juice

green onion, sliced

avocado

seaweed salad

jalapeno

green onions

dry sushi rice (also known as sticky rice)

water

butter

tbsp rice vinegar

tbsp sugar

tsp salt

Dice up tuna and toss with poke marinade ingredients in a large bowl. Set aside and let sit for 15-20 minutes in the fridge. To make tuna easier to slice (optional), freeze for 30-60 minutes or so before slicing.

Meanwhile, cook rice, water and butter together in a rice cooker. Let cool, then stir in rice vinegar, sugar and salt. Rice can be made up to 2 days in advance and is best served cold.

When ready to serve, add tuna poke on top of cool rice and add whatever toppings you desire. Enjoy!
