Ahi tuna poke might just be more Hawaiian than Don Ho. It&#039;s the perfect mashup of traditional Polynesian foodways with Asian immigrant ingredients like rice wine vinegar and yuzu juice. Can it be safely consumed raw? Interestingly, tuna are some of the few fish the FDA approves for raw consumption without first being deep frozen. It also has a long history of being consumed raw without problems. But I like it because it can be made really, really fast. This recipe first appeared in Season 1 of Good Eats: The Return.

Ahi Tuna Poke

white soy sauce

sesame oil

rice wine vinegar

yuzu juice

Whisk together the white soy sauce, sesame oil, rice wine vinegar, and yuzu juice in a medium bowl.

Add the scallions and macadamia nuts, followed by the tuna, and fold together. Marinate for 15 minutes at room temperature before serving.

raw sushi grade tuna (cubed small)

soy sauce

sriracha

scallion (sliced)

brown rice (heated)

rice vinegar

cucumber

avocado (about 1 medium)

Furikake (such as Eden Shake

soy sauce (or gluten-free)

mayonnaise

sriracha sauce

In a large bowl combine tuna, soy sauce, sesame oil, sriracha and scallions.

Gently toss and set aside while you prepare the rest.

Place the heated rice in a bowl and add rice vinegar; stir.

In a small bowl, combine mayonnaise and sriracha sauce.

Lightly spray the inside of a 1 cup dry measuring cup with oil (use one with straight edges) then start by layering 1/4 cup cucumber, then 2 tablespoon of avocado and smooth, then 1/4 of the tuna and flatten with the back of a spoon, and finally 1/4 cup rice.

Carefully turn the cup upside down to turn the stack out onto a plate, lightly tapping the bottom of the cup if necessary.

Sprinkle with Furikake and drizzle with 1 teaspoon soy sauce and sriracha mayonnaise.

Repeat with remaining ingredients.

Tuna Poke Salad

tuna

scallions (plus more for garnish)

soy sauce or gluten-free tamari

tbsp less sodium soy sauce (or GF Tamari)

tsp wasabi (in tube)

tbsp rice wine vinegar

tbsp sesame oil

baby greens (arugula

cucumbers ((from 2 Persian) peeled and diced 1/2-inch cubes)

Hass avocado ((4 ounces) sliced)

edamame

furikake (for topping (I like Eden Shake))

Combine the vinaigrette ingredients in a small bowl and set aside.

In a medium bowl, combine tuna with scallions, soy sauce, sesame oil and sriracha. Gently toss to combine and set aside while you prepare the salad.

In 2 bowls, layer the salad greens, 1/2 of the tuna, edamame, avocado, cucumber and drizzle with Soy-Wasabi Vinaigrette.

Top with furikake and scallions, for garnish.

In a bowl, combine the cubed ahi, soy sauce, sesame oil, salt, Maui (or yellow) onion, green onions, gochugaru, and toasted macadamia nuts and gently toss with your hands or a spoon. Adjust the seasoning to your liking.

Serve over rice and enjoy immediately.
