This AIP Baked Cassava Cake is actually an Asian dish that’s been adapted to the autoimmune protocol. This version of the recipeis egg and dairy free but is definitely not lacking in flavor. It’s an absolutely delicious dessert. This recipe fits the Paleo and Autoimmune Protocol diets.

AIP Baked Cassava Cake

Cassava (shredded (if frozen, thawed))

Shredded Coconut

Orange (zested)

Honey

Coconut Cream

Tapioca Flour

Coconut Oil

Vanilla Bean Powder (I used Kiva)

Pre-heat oven to 375 degrees. Line loaf pan with parchment paper.

In a large bowl, mix all of the ingredients together.

Pour into the prepared loaf pan then bake for 1 hour or until the edges are golden brown.

Remove from the oven then allow to cool completely before slicing. Serve at room temperature or chilled.

Vietnamese Pickled Vegetables

Water

Salt

Carrots, peeled and shredded (about 3)

Daikon, peeled and shredded (about 1/4 large)

English Cucumbers ((about 3 Persian Cucumbers would be a good substitute))

Put vinegar, water, honey and salt into a large bowl and whisk until the honey is dissolved.

Add carrots, daikon, cucumbers and toss to combine.

Cover and refrigerate for at least 1 hour or up to several hours before serving.

10-Vegetable Soup (AIP/Paleo)

TBSP extra virgin olive oil

white sweet potato, peeled and chopped

onion,

carrot, chopped

rib of celery, chopped

chayote squash, peeled,

turnip,

zucchini,

yellow squash, chopped

cabbage

TBSP basil

thyme

tsp sea salt,

tsp black pepper (omit

garlic powder

baby spinach

beef broth,

TBSP red wine vinegar

In a large soup pot, heat olive oil over medium heat.  Add sweet potato, onion, carrot, celery, chayote squash, and turnip.  Stir to combine.  Cover and cook for 7 minutes, stirring occasionally.

Add zucchini, yellow squash, cabbage, basil, thyme, salt and garlic powder.  Sauté for 1 minute.

Turn heat up to medium high.  Add the rest of the ingredients, and heat through.  Taste for salt.  Serve!

Chicken Hearts Recipe

Chicken Hearts (ventricles, veins, or fat removed)

Place the hearts in a bowl, sprinkle salt and then fill with water until they are just submerged. Stir to combine then place in the refrigerator for 3 hours.

Remove from the fridge and drain the water. Then add the rosemary, thyme and olive oil and let marinate for about 1 hour in the refrigerator.

pan fry the chicken hearts

Heat a large skillet over high heat. Then add the hearts and marinade to the pan and cook until just cooked through about 5 minutes, stirring occasionally. Make sure the pan is large enough so that the hearts are all in a single layer. You don’t want to crowd the pan otherwise the hearts won’t cook evenly. You’ll know when the hearts are done because they may start to burst.
