Healthy breakfast frittata recipe made in your air fryer- what could be easier! Low carb egg dish served in less then 10 minutes. This omelette frittata is vegetarian, gluten free, keto and weight watchers friendly.

Air fryer breakfast frittata

eggs

bell pepper (diced)

onion

cremini mushrooms

salt and pepper

tbspn cream

tbspn shredded cheese (like cheddar or any)

Whisk eggs with cream. Add salt and pepper. Add veggies.

Pour the mixture to the pan and place that into the air fryer. Cook for 5 minutes.

Add shredded cheese and then cook for another 1 minute.

Carefully remove the pan from the air fryer ( i used a towel) and serve with avocado, tomatoes and bread if desired. Enjoy.

Air Fryer Breakfast Casserole is quick to prepare, versatile, healthy, and packed with veggies (and optional meat) for a fluffy and flavorful breakfast! Swap out the fillings based on season for a breakfast that will never become boring.

Air Fryer Breakfast Casserole

milk (any (I use whole milk))

brown mushrooms (thinly sliced)

red bell pepper (thinly sliced)

red onion (thinly sliced)

baby spinach (or kale)

Parmesan cheese (shredded)

salt (divided)

black pepper (to taste)

Chop vegetables and grate cheese.

Preheat air fryer at 400 degrees F for 5 minutes.

Line basket of air fryer with parchment paper making sure to position it evenly in the center, so there is enough room to hold egg mixture on all sides. Trim off sticking out corners.

Add mushrooms, bell pepper, red onion, 1/4 tsp salt and pepper. Air fry for 15 minutes, shaking and stirring once.

In the meanwhile, in a medium bowl add eggs, milk, 1/2 tsp salt, pepper and whisk well.

Remove basket from the air fryer, add spinach and stir with small spatula until a bit wilted and distributed evenly.

Sprinkle with Parmesan cheese and carefully pour egg mixture on top. Bake at 300 degrees F for 20 minutes or until toothpick inserted in the middle comes out clean.

Cut into 8 slices with a serrated knife and enjoy hot or cold.

Whisk the eggs, mustard powder and salt in a bowl or large mixing jug [Note 2]. Add the shredded cheese and the other filling ingredients and mix until combined. 

Preheat air fryer to 320°F / 160°C.

Carefully pour the frittata mixture into the pie pan. Do not over-fill it, be sure to leave at least ¼ inch of space at the top as the frittata will expand as it cooks.

Place the frittata in the air fryer basket (take care as air fryer basket will be hot). Air fry frittata for:  - 20 minutes for individual frittatas - 25 minutes for a single 8inch/20cm frittata

Frittata is done when the top is golden...

Frittata is done when the top is golden brown, and it has reached 160°F / 72°C in the center [Note 3].
