Peanut Noodle Salad with Satay Tempeh

oz tempeh (224 grams)

portion of satay marinade

english cucumber, thinly sliced (150 grams)

bell pepper, thinly sliced (175 grams)

peanut sauce

cilantro

green onions

sesame seeds

Air Fryer Method: Pre-heat air fryer at 375 F. Add tempeh pieces to basket and air fry for 7 minutes. Shake the basket or flip the tempeh and air fry for another 5-7 minutes or until crispy. 

Oven Baked Method: Pre-heat oven to 400 F. Add tempeh to silpat or parchment lined baking tray and bake for 12 minutes. Scatter and flip the tempeh pieces and bake for another 10 minutes or until crispy.

While the tempeh is cooking, bring a pot of water to a boil. Cook noodles following manufactures directions. Once noodles are cooked, drain the water and add them to a bowl of cold water to stop them from over cooking. During this time, prepare and slice the veggies. 

Add ramen noodles, veggies and peanut sauce to a bowl and toss until everything is coated in the sauce. Add tempeh pieces and give it another quick toss. 

Serve with cilantro, sliced green onions, sesame seeds and lime juice and enjoy!

Preheat.

Prepare tempeh.

Prepare tempeh by slicing into ½-1&quot; cubes. Place tempeh cubes into a large mixing bowl.

Add marinade.

To the same bowl add avocado oil, coconut aminos, sesame oil, garlic powder and salt. Toss to coat. Let sit and marinate for 10 minutes.

Air fry.

When marination has finished, place the tempeh in a single layer in your air fryer basket or tray. Air fry for 15 minutes or until tempeh is firm, crispy and golden.

Serve and enjoy.

Slice tempeh into 1/2 inch slices (don&#39;t slice them too thin!). Place the tempeh directly into your air fryer, making sure none of them are touching.

Air fry the tempeh at 400° for 8 minutes, flipping halfway through.

While the tempeh is cooking, make the sauce: Add the coconut aminos (or soy sauce), maple syrup, rice vinegar, garlic, ginger, and cornstarch to a small saucepan. Heat over medium-low and whisk until everything is combined and sauce has thickened a bit.

As soon as the tempeh is done, transfer it to the saucepan and stir until it&#39;s coated in the sauce. Enjoy!

I am in love with tis sauce!  I didn't have room for another saucepan so I used a coffee cup and the microwave for my sauce.  I heated it up and then added cornstarch and stirred it really well.  I then put it back into the microwave for about 45 seconds and it was thickened and perfect.
