These fluffy almond flour pancakes are a hearty, delicious breakfast or brunch! This recipe makes 6 small pancakes. If you&#x27;re serving more than two people, you may want to double it.

Almond Flour Pancakes

baking powder

sea salt

almond milk

maple syrup (more for serving)

Extra-virgin olive oil (for the pan)

In a medium bowl, whisk together the spooned and leveled almond flour, baking powder, and salt.

In a small bowl, whisk together the almond milk, eggs, maple syrup, and vanilla.

Pour the wet ingredients into the bowl with the dry ingredients and stir. If your batter is very thick, stir in more almond milk until it resembles the photos above. If it&#x27;s too thin, sprinkle in a touch more almond flour. (See photo in the blog post for batter consistency).

Heat a non-stick skillet over medium-low heat. Brush the pan with a little olive oil and use a ¼-cup measuring cup to pour the batter onto the pan. (Note: these are more delicate than regular flour pancakes so it&#x27;s important to make them small). Cook the pancakes for 1 to 2 minutes per side, turning the heat to low as needed so that the middles cook without burning the outsides. I usually turn my heat lower after each batch as my pan starts to hold residual heat. Almond flour pancakes darken a little quicker than pancakes that use regular flour.

These are the best gluten free, paleo, fluffy almond pancakes. They are high protein and will keep you fuller  a lot longer than any other regular pancake recipe.

First, start by mixing the dry ingredients together in a bowl. Starting with the almond flour, baking powder, coconut sugar and salt.

Then, in a separate bowl mix the whisk ingredients together. starting with the eggs, vanilla extract, almond milk, apple cider vinegar, and coconut oil.

Then pour the wet ingredients over the dry ingredients and mix just until everything is well incorporated.

Preheat an oiled pan on the stove at medium-low heat and pour about 1/4 cup of batter onto the center of the pan and let it cook for about 2-3 minutes. You will know when it&#x27;s ready to flip when little bubbles start to form on top of it.  Flip it and let it cook for another minute of so.

In a medium bowl, combine flour, baking powder, baking soda, salt. Set aside.

In a large mixing bowl, whisk egg, cream, milk, sugar, and vanilla until well combined.

Add dry ingredients to wet ingredients and mix only until just combined, do not overmix.

Heat a griddle over medium heat. If desired, grease with butter, oil, or nonstick cooking spray.

Add batter by about 1/4 cup scoops.

Cook for 2-3 minutes or until bubbles appear and don’t disappear.

Flip and cook for another 2-3 minutes or until golden brown and cooked through.

Wet Ingredients

Dry Ingredients

¼ teaspoon baking soda (or sub 1 teaspoon baking powder)

In large bowl, whisk together the eggs, milk, oil, pure maple syrup, vanilla and almond extract together until smooth and well combined. Next, add in almond flour, baking soda and a pinch of salt; stir with spoon until well combined.

Lightly coat a large nonstick skillet with butter, olive oil or coconut oil and place over medium heat. Once oil or butter is hot, drop about 1/4 cup of batter onto the skillet. It&#039;s important to cook until bubbles appear on top and the edges are well cooked.

Flip cakes and cook until golden brown on underside, 2 minutes. If you find that the pancakes are browning too quickly then you need to lower your skillet heat a bit. I normally start on medium or medium low, then decrease to lower heat later so that my pancakes don&#039;t burn.

Wipe skillet clean and repeat with more butter/oil and remaining batter. Makes 3 servings, 2 pancakes each (6 pancakes total).
