Take 12 7-inch skewers and thread one of each ingredient item onto each skewer. Serve immediately or store, covered, in the fridge for up to 1 day.

lb. roasted red peppers, chopped into bite-sized pieces

artichoke hearts, drained and chopped into bite-sized pieces

I would not use the tortellini below someone suggested a square of bread.  this sounds good to me.  I would dip it in olive oil first  I used black and green canned olives for color and I roasted red and yellow peppers also for color  I added mortadella  and prosciutto, mushroom caps that have been marinated  since I had a very long skewer  I additional  basil leaf . mozzarella

This was an easy dish to prepare, although I wouldn't say it took only only 15 minutes. They look beautiful laid out on a platter and everyone thought they were quite tasty. I used marinated artichokes for additional flavor. Putting these in my keeper folder! FYI, I used 6" skewers; apparently the ones above are 4", because mine pieces were not squished together as tightly. Next time I would use the 4" ones.

Yes well I want to see this done in 15 minutes.  I set up my mise en place, then started the clock.  Put the tortellini up as instructed, while they were cooking I cut up the red peppers and artichokes and set up the assembly line.  Oddly enough, I have a slew of the bamboo skewers just as pictured, not that it really mattered.  Took me an hour but I did make 50 appetizers.  I added a few red pepper flakes to the tortellini as my group likes robust flavors.  Set out on a tray and sprinkled fresh minced parsley on top. They were the first appetizer to disappear, with my tequila grilled shrimp coming in second.  Obviously a keeper and easy to make.  Thanks for a lovely dish.  Will post a photo the next time around!

Prepare

Prepare tortellini according to package directions and drain well.

Toss

These fun party skewers turn classic Greek salad into flavorful finger food. Greek Salad Skewers

creamy feta cheese,

½ English cucumber, (halved lengthwise, then sliced into half moons)

green pepper, (cored,

garlic clove, (minced)

½ lime, (juice of)

red wine vinegar

extra virgin olive oil

Kosher salt and black pepper

Prepare 10 to 12 small bamboo skewers (I used 6-inch skewers). Take one skewer and thread through it one feta cube, a slice of cucumber, a piece of green pepper, one cherry tomato, and, lastly, one kalamata olives at the very top. Repeat till you have 10 to 12 small skewers of feta and veggies.

In a small bowl, add the garlic, lime juice, and red wine vinegar. Season with kosher salt, black pepper and the dried oregano. Whisk together, and as you do, drizzle the extra virgin olive oil and keep whisking.

Arrange the skewers on a serving platter and pour the dressing over. Serve or refrigerate for later.
