Banana Fritters are made with cakey batter, fried to perfection and loaded with bananas.

Banana Fritters

(250 grams) all-purpose flour

baking powder

salt

cinnamon

eggs

(122 grams) milk

vanilla

butter, (melted)

bananas, (chopped)

Vegetable or canola oil, (for frying)

confectioners' sugar

water

In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon. Set aside.

In a separate bowl, combine the eggs, milk, vanilla, and melted butter.

Add the egg mixture to the flour mixture, stirring until combined.

Fold in the ripe, chopped bananas.

Fill a frying pan halfway with oil. Heat over medium heat until the oil reaches 375°F with a candy thermometer.

Slowly drop ¼ cup of batter into the oil and let fry until golden brown, about 2-4 minutes per side depending on the heat of your oil.

Flip and fry until the opposite side is golden brown. To test for doneness, insert a small knife (or toothpick) into the center. If there&#039;s still uncooked batter in the center, fry for a bit longer. Transfer to a paper towel-lined cooling rack and let cool. Repeat with the remaining batter being sure to check the temperature of the oil throughout the process.

BANANA FRITTERS

Make the glaze by combining the sugar, vanilla, and 3 teaspoons of water. Add more water, 1 teaspoon at a time, until a pourable consistency is reached.

Drizzle the glaze over the cooled fritters and let dry. 

GLAZE

These crisp perfectly sweet apple fritters are a super-easy homemade treat that comes together in a few minutes.

Apple Fritters

vegetable oil

all-purpose flour (180 grams)

tbsp sugar (36 grams)

2.5 tsp baking powder

nutmeg

milk (180 milliliters)

tsp vanilla (10 milliliters)

tbsp butter

apples (about 460 grams)

tbsp lemon juice (about 1/2 lemon)

sugar (200 grams)

lemon juice (fresh)

water (plus more if needed)

Add about a quart of vegetable oil into a heavy pot or Dutch oven. Place over medium high heat with a thermometer attached to the side. The oil needs to be heated to about 350F so keep an eye on the thermometer while you prepare the batter and adjust temperature if needed.

Peel the apples and cut flesh from core. Chop into roughly half inch pieces. Transfer to a bowl, squeeze the juice of half a lemon over them, toss and set aside.

In a large bowl add the flour sugar, cinnamon, nutmeg, salt and baking powder. Whisk together and set aside.

In a medium bowl add the eggs, vanilla, and milk. Whisk together well and pour into the dry mixture. Us a spatula to fold the wet into the dry until ALMOST combined.

Add the cubed apples and mix together so all the apples are coated.

Pour in the melted butter and mix in.

Use an ice cream scoop to transfer batched of batter into the oil. I suggest frying about 6 fritters at a time.

Once the fritters are golden brown on the bottom us a turn them over with thongs or a spider skimmer and fry until golden brown on other side.

Transfer fritters to a plate lined with a few layers of paper towels and continue frying until better is all used up.

Sift the sugar into a medium bowl then add the lemon juice and water. Whisk together until completely incorporated and add more water if needed. You want a thin consistency for the fritters.

Either dip the fritters in the glaze and allow to set on a wire rack or use a spoon to drizzle the glaze over them.

My fritters have a touch of lemon inside and in the glaze to wake the flavors up but you can also roll in cinnamon sugar if that’s your jam.

Apple Fritters are easy to make at home in 30 minutes or less with NO yeast! These crunchy, sweet donuts are vegan but no one would guess it. Full of fresh apples!

In a large bowl, add the flour, sugar, baking powder, salt and cinnamon and stir to combine.

Now add the applesauce and soy milk to the bowl with the dry ingredients and mix until just combined. Do not over mix. Fold in the diced apples.

Heat 2 inches of oil in a large, heavy skillet or pot to about 375 degrees (you do need a thermometer). Scoop 1/3 cup of the apple fritter batter and place in the hot oil, spreading it down to flatten quite a bit. You can also first flatten them on a floured surface, then transfer carefully to the pot for frying.

Cook on one side for about 2-3 minutes until golden brown, then flip with tongs and cook another 1-2 minutes until browned.

Place the cooked fritters on a cooling rack with a pan or parchment paper underneath to catch any oil drippings, as well as to catch glaze later.

Continue with all the batter until you have used it all, then turn off the heat.

Make the glaze: Whisk the glaze ingredients together in a small-medium sized bowl until smooth, then dunk each fritter into it. Place back on rack to harden and drip. Wait a few minutes if possible for the glaze to harden before enjoying.

In a mixing bowl, combine the flour, sugar, baking powder, cinnamon and salt.

Make a well in the mixture and add 1/3 cup of milk, eggs and applesauce. Mix completely. Peal and dice the apples and fold into the batter.

In a pan or skillet, bring oil to 375°. Once oil is hot, drop 1/4 cup of batter in the oil.

Let it fry on each side for 3 minutes until golden brown. Remove and let rest on paper towels to help soak up excess oil.

Place fritters on a baking rack to cool

In a mixing bowl whisk the glaze ingredients together. Set rack of fritters on a baking sheet to catch the excess glaze while pouring glaze over the fritters. Glaze the fritters 2-3 times.

Heat the vegetable oil in a skillet or Dutch oven to 350 degrees. If a thermometer is not available, follow the test method in Notes below.

Using a knife or kitchen shears, cut up the apple filling into tiny pieces. Set aside.

In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.

Add in the milk and eggs; mix until combined.

Fold in the apple pie filling with a spatula.

Drop the batter by ¼ cup full into the hot oil, spread them with a spoon to flatten the fritter out. Do not crowd the skillet or pan. Cook only 1-2 fritters at a time.

Allow the bottom side of the fritter to become golden brown, flip and cook the opposite side to golden brown; about 2 minutes on each side.

Transfer to a plate lined with a paper towels to absorb any excess oil. Transfer to a wire cooling rack to cool completely before glazing.Repeat for all fritters.

Line a rimmed baking sheet with parchment or foil. Place the cooling rack in the baking sheet. This allows excess glaze to drip down and not pool under the fritters.In a medium bowl, whisk together the powdered sugar and milk. Spoon the glaze over the fritters on the wire rack. To coat the entire fritter gently dip into the glaze allowing any excess to drip back into the bowl. Place on the wire rack for the glaze to set.

Best served warm same day. Can be stored in a container at room temperature or in the fridge.

Homemade Apple Fritters

It&#039;s so easy to make these classic fritters in the air fryer.

Air Fryer Apple Fritters

(120 grams) all purpose flour

(200 grams) sugar

pinch ground cardamom (optional)

¼ cup (60 milliliters) milk

apples (peeled, cored and chopped)

cooking spray or oil (for brushing)

Preheat the air fryer to 350F / 180C.

Whisk together the flour, baking powder, sugar and spices in a mixing bowl.

Add the eggs, milk and vanilla extract, whisking to combine.

Stir in the apples; the dough should hold together.

Measure out around a ⅓ cup of dough for each fritter, and add to the basket of the air fryer. Makeing sure to leave space in between. Spray or brush the fritters with oil, then fry for 8 minutes.

Flip the apple fritters, spray or brush the other side with oil the and cook for an additional 3 minutes.

Remove from air fryer, drizzle with glaze (if desired), and serve.

Easy Homemade Apple Fritters

Dice your apples, place in a bowl and add lemon juice. This will prevent the apples from browning.

In a large bowl, whisk eggs.  Add milk, vanilla, and cooled melted butter (don&#039;t add it hot, you&#039;ll cook your eggs!) Whisk together with a fork until it is all combined.

In another medium sized bowl, combine the flour, sugar, baking powder, cinnamon, salt, nutmeg, and ground ginger.

Add dry ingredients to wet and mix well until a loose dough is formed.  Fold in the apples.

Fill a frying pan or sauce pan with about 3-4 cups of oil or so that you have about 3-4 inches of oil in your pan. Heat oil over medium heat until the oil reaches 375°F with a candy thermometer or an instant read thermometer.  If you don&#39;t have a thermometer, use the wooden spoon test (see notes).

Use a measuring cup to drop batter into oil, 1/4 cup or 1/3 cup. Fry until the outside is golden brown. Flip and fry other side until golden brown, for a total of about 4-5 minutes.  You&#39;ll know they&#39;re done if you insert a small knife into the center and it comes clean. If not, fry a little longer so that the center is fully cooked. This time will depend on the size of your fritter.

Use a slotted spoon to transfer to a paper towel-lined cooling rack and let cool. Repeat with all the batter.

In a small bowl, combine the sugar, vanilla, and 2 teaspoons of milk (or water). Add more milk, 1 teaspoon at a time, until you have the consistency you want.  Think thick by drizzly.

Drizzle the glaze over the cooled fritters and let dry.

Apple Fritters are essentially fried donuts stuffed with apples. These apple fritter rings are great rolled in cinnamon sugar, dusted with powdered sugar, or drizzled with a lemon glaze.

Apple Fritters Recipe

all-purpose flour

Tbsp sugar

tsp baking powder

tsp salt

milk (1% or whole milk)

Tbsp unsalted butter (melted (unsalted or salted))

Tbsp lemon juice (juice of 1 medium lemon)

Canola oil (or vegetable oil

In a medium bowl, whisk together the dry ingredients: flour, sugar, baking powder and salt.

In a second large bowl, whisk together milk, egg yolk and melted butter. Gradually add the flour mixture into your wet ingredients and whisk until smooth.

Pour 2 to 3 inches of oil into a large pot or dutch oven and heat over medium/high heat to 375˚F on a thermometer.

Peel core and slice apples into 1/4”-thick rings and place into a shallow dish. Squeeze lemon juice over apple slices and use your hands to gently toss apple rings to coat with lemon juice (this will prevent browning).

In a medium bowl, beat 2 egg whites with an electric hand mixer, egg beaters or a whisk until stiff peaks form, but whites are not dry. If you over-beat, it will be difficult to blend. Use a spatula to gently fold whites into the batter until fully incorporated.

Remove apple slices one at a time from the lemon juice, allowing any excess juice to drip back into the bowl then dip both sides of the apple in batter to fully coat, allowing excess batter to drip back into the bowl.

Fry in hot oil batches in a single layer (5 or 6 at a time to avoid crowding), frying for about 2 minutes per side or until browned, flipping once. Keep oil above 350˚F while frying.

Remove with a strainer and transfer fritters to a paper towel-lined plate to absorb excess oil. To serve, dust with powdered sugar or dip both sides in cinnamon sugar.*
