These delightfully soft and moist muffins are made with whole wheat flour, coconut oil, and sweetened with maple syrup. They are packed with wholesome goodness and full of flavor.

Healthy Apple Carrot Muffins

(225 grams) whole wheat pastry flour

tsp (10 grams) baking soda

cinnamon

(80 milliliters) melted coconut oil

(165 milliliters) pure maple syrup

eggs

(120 grams) plain Greek yogurt

tsp (5 milliliters) vanilla extract

(125 grams) grated apples (sweet variety is best)

(95 grams) grated carrots (about 1 med)

(75 grams) raisins

Preheat oven to 425F and line a 12 cup muffin pan with paper liners.

In a large bowl, toss together the flour, baking soda and cinnamon. Set aside.

In a medium bowl, whisk together the coconut oil, maple syrup, eggs, yogurt and vanilla.

Pour the wet ingredients into the dry and stir until the batter starts to come together.

Fold in the carrots, apple and raisin until just combined. Spoon the batter into the muffin cups.

Bake at 425F for 5 minutes, then reduce the temp to 350F and bake for another 15 minutes for until a toothpick inserted into the center comes out clean.

These muffins are perfect for any occasion and I love the fact that they are healthy. I made them a while ago and they are delicious! I am planning on making them more often when my kids go back to school to pack them for lunch. Thank you for sharing!

These muffins are wonderful!  Made a batch and took them to the office and they were a big hit!  They are very much a "healthy carrot cake" muffin.  They freeze very well, which I appreciate.  Did make a few tweaks:  I diced the apples rather than grated them, substituted chopped walnuts for the raisins, added 1/2 tsp. salt (recipe didn't call for any), and sprinkled the tops with brown sugar before baking.  So good, and has already become a favorite recipe!

Great recipe. They disappear quickly.  One question. Can I substitute honey for maple syrup without changing the amounts?

Little Sweet Baker – Healthy Apple Carrot Muffins

These Apple Muffins are incredibly moist muffins and full of cinnamon apple flavor. Super easy to make and a great way to use up those apples you have laying around.

Apple Muffins

sugar ((or use 1 1/2 cups for a less sweet muffin))

oil (vegetable, canola, or coconut oil)

vanilla

all-purpose flour

salt

baking soda

diced apples (around 3 apples))

Brown sugar for topping ((around 1/2 cup))

Preheat oven to 350 degrees and line muffin pan with 18 paper liners.

With a mixer, cream together sugar, eggs, oil, and vanilla. The mixture should be a pale yellow.

In a separate bowl, whisk together flour, baking soda, salt, and ground cinnamon. Add dry ingredients to creamed mixture and mix until combined. The batter will be very thick almost like the texture of cookie dough. Mix in the diced apples. The dough will loosen up a bit when the apples are mixed in.

Fill paper liners almost to the top, about 3/4 of the way full. Sprinkle each muffin top generously with brown sugar.

Bake at 350 degrees for 20-24 minutes. Makes 18 muffins.

These apple cinnamon muffins are soft and moist with a sweet cinnamon finish. They easy to make and loaded with tender chunks of apples!

Apple Cinnamon Muffins

& 1/2 cups (310 grams) all-purpose flour

tbsp baking powder

nutmeg

tsp salt

(125 milliliters) vegetable oil

(200 grams) granulated sugar

(188 milliliters) milk

tsp vanilla extract

apples (peeled, cored, and chopped)

sugar

Preheat oven to 400F and line a 12 cup muffin pan with paper liners.

In a large bowl; whisk together the flour, baking powder, cinnamon, nutmeg, and salt. Set aside.

In a medium bowl; whisk together the oil, one cup of sugar, eggs, milk, and vanilla.

Add the wet ingredients to the dry ingredients, and gently stir using a rubber spatula until just combined. Fold in the chopped apples.

Divide the batter into the 12 muffin cups. In a small bowl, mix together the cinnamon-sugar. Generously sprinkle on top of each muffin.

Bake for 20-22 minutes or until a toothpick inserted into the center comes out clean.

Just baked these today and they were easy and are really good! Next time I’ll double the recipe. Also thought about adding a caramel square to the middle and will try that with next round.  Not overly sweet which was nice.

Crunchy Topped Apple Muffin Recipe

apples, chopped

dark brown sugar (200 grams)

oil, canola or vegetable

buttermilk

all-purpose flour (350 grams)

baking powder

sugar (150 grams)

unsalted butter, melted (58 grams)

Preheat the oven to 350°F. Line 9 jumbo muffin cups or 16 regular size muffin cups with paper liners. Spray the liners.  Set aside.

Peel and core the apples.  Cut in large chunks and put int he bowl of a processor.  Process several times to chop the apples, but keep them in larger pieces.  Set aside.

Combine the brown sugar, vegetable oil and egg in the bowl of a mixer.  Beat to mix completely.

Whisk together the flour, cinnamon, baking soda, baking powder and salt.  Add it alternately with the buttermilk.  3 additions of flour and 2 of buttermilk are fine. The batter will be very thick.
