An easy Apple and Sour Cream Slice made from scratch.

Apple Slice

(1 cup) plain flour flour

(1/2 cup) icing sugar or powdered sugar

(3/4 cup) desiccated coconut

salt

(1/2 cup or 1 stick) unsalted butter, melted

(2 and 1/2 cups) canned apple slices

cinnamon

nutmeg

lemon,

240 ml (1 cup) full fat sour cream

caster sugar sugar

Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch square baking pan with baking or parchment paper, ensuring two sides overhang (this will make it easier to remove the slice later).

Shortbread crust

In a large mixing bowl, add flour, sugar, coconut and salt. Stir together. Add melted butter and stir until combined. Mixture should resemble wet sand.

Place mixture into prepared baking pan. Press down using the back of a dessert spoon to form one even layer. Bake for 10-12 minutes or until crust is just golden on the edges. Remove from oven.

Apple fillingIn a large mixing bowl, add apples, cinnamon, nutmeg and lemon zest. Stir to combine. Pour apples over crust (it’s ok if the crust is still hot) and spread out to form one even layer. 

Sour cream layer

Dollop spoonfuls of sour cream over apples. Spread out to form one even layer. Combine sugar and cinnamon. Sprinkle cinnamon sugar all over the top. 

Bake for 20-22 minutes or until slice no longer wobbles in the middle. Either enjoy warm straight from the pan OR let slice chill in the fridge for at least two hours. Then carefully slice into small squares to serve. 

This really did taste like apple pie! Amazing!

This is a great apple slice recipe. The girls at Bake Club said they were going to make this a regular.  That&#039;s saying something, considering they have so many to choose from.

Prepare a 9&quot; square tin or tin with similar volume with baking paper and butter.  Oven temp 170°c fan

Add all the ingredients except the sour cream in a food processor. Blitz till it resembles bread crumbs. Add the sour cream and mix again until it just comes together. (Don’t over beat or the dough will become too soft.) Rest in the fridge while you continue with the recipe.

Dough Method

Slice apples and cook in sugar (200 gm) add a little water to help the cooking process. Pour apples into a sieve pouring off all the juice leaving them to dry out slightly.

Roll or press pastry into the base of a rectangular baking tray and bake until lightly brown.

Sprinkle the dough with the raisins, cinnamon and lemon rind.

Put dry apples on top the half-baked dough.

Beat three egg whites till silky. (Over mixing here will cause your whites to become dry and they won’t mix well with the other wet ingredients later.)

Whip egg yolks with 60 gm sugar (till they hold a trail as shown in the meeting).

Whip the sour cream, so it becomes a little more liquid, making it easier to fold through the other ingredients.

Fold yolk and white mix together then add the sour cream and make a smooth light mix. Pour on top of the apples, sprinkle with remaining sugar. Bake until cooked (golden brown).

Filling Method

This apple slice may evoke some fond memories.  Something our Nans used to make, that our kids should really get the chance to try.  With its crumbly base and top, and sweet apple filling.

Nana’s Apple Slice

tsp baking powder

120 g Caster Sugar

120 g Butter

egg (1 Egg extra large)

g cool water If needed

300 g cooking apples Granny Smith (Pink Lady

cinnamon powder

clove powder (optional)

g Caster sugar

g dates (chopped)

Add flour, baking powder and sugar to the TM bowl, MC in 4 seconds/speed 6.

Add butter to the TM bowl and mix MC in 10 seconds/speed 6.

Add egg and mix 10 seconds/speed 6 again.  Scrape down and lift the mixture off the bottom of the bowl and repeat if necessary.

Tip the contents out of the TM bowl and separate them into two; there should be around 300g in each portion.  Add one half into the base of the tin and spread out to cover.  You can do this by pressing down with the back of a spoon or use a small rolling pin.

Roll the second half out onto some baking paper for the top.  Sit it in the tin with the baking paper still in place for easy removal, and rest in the fridge while you make the apple filling.

Add the apple to the TM bowl and chop 4 seconds/speed 5.

Add the remainder of the ingredients for the apple filling except for the dates. Cook for 10 mins/90°C/speed 2.

In the meantime, chop the dates and set them aside in a bowl; once the apple filling is cooked, sit it on top of the chopped dates and allow the filling to cool.  It should only take around 10 mins if you pop it in a wide bowl or tray.

Set the oven to 180°C fan (350°F fan).

Once cool, spread the filling over the biscuit base.

Top with the other half of the pastry you prepared earlier.

Brush lightly with milk or egg glaze. Sprinkle with sugar and prick a few holes with a fork to allow the steam to escape.

Bake for 25 minutes. Allow to stand in the tin until cold. Slice and serve or remove from the pan while warm and serve with cream or icecream.

Thermomix Method:

Weigh the flour, baking powder and sugar into a bowl and sift or whisk to combine.

Rub the butter into the dry mix.

Add egg and mix into a firm dough. If it seems a little dry, add up to 15g cool water.

Separate your mix into two; there should be around 300g in each portion.  Add one half into the base of the tin and spread out to cover.  You can do this by pressing down with the back of a spoon or use a small rolling pin.

Make the apple filling by chopping the apple and placing it in a medium pot with all the filling ingredients except the dates.  Add 1 cup of water and cook until reduced (around 15 mins).

In the meantime, chop the dates and set them aside in a bowl.  Once the apple filling is cooked, sit it on top of the chopped dates and allow the filling to cool.  It should only take around 10 mins if you pop it in a wide bowl or tray.

Bake for 25 minutes. Allow to stand in the tin until cold.

Cut and serve either cold or warm with cream or ice-cream.

Conventional Method:
