There&#039;s nothing better than a stack of fluffy pancakes on weekends! These vegan applesauce pancakes are quick &amp; easy to make. No eggs and no bananas!

Vegan Applesauce Pancakes

all-purpose flour

cinnamon powder (+ more to add on top)

baking powder

applesauce (+ more to add on top)

plant-based milk (e.g. oat milk)

maple syrup (for drizzling on top)

canola oil (for the pan)

In a bowl, combine the flour, cinnamon powder, and baking powder. Whisk.

Add in the applesauce and plant-based milk. Whisk until incorporated. Let the batter sit for a few minutes.

Spray a flat pan or griddle with oil and heat it up to medium to low heat. Add an ice cream scoop full or a small ladle of pancake batter*. Let it cook until the middle becomes bubbly and the corners set, then flip with a spatula. Let it cook on the other side until done. Repeat for all the pancakes. You should be able to get about 6 pancakes out of the batter.

Stack the pancakes, top with more applesauce, cinnamon powder, and drizzle with maple syrup.

Fluffy applesauce pancakes are easy and delicious with a hint of brown sugar and cinnamon for a cozy fall flavor. The addition of applesauce gives these homemade pancakes the perfect texture. These will quickly become your favorite fall breakfast!

Applesauce Pancakes

applesauce, (unsweetened)

vanilla

To a large bowl, add the flour, brown sugar, baking powder, cinnamon, and salt. Whisk to combine.

Add the milk, applesauce, vanilla, and egg to the bowl of dry ingredients. Whisk together until smooth and blended.

Allow the batter to sit for a couple of minutes while you heat the skillet. It allows the batter to thicken a little.

Preheat a large skillet to medium-high heat. Or heat a griddle according to the manufacturer&#39;s instructions.

Lightly spray the skillet or griddle with non-stick cooking spray.

Pour ¼ cup batter onto the griddle or skillet and cook until bubbles begin to appear on the surface. Carefully flip and cook the opposite side until golden brown. Adjust and lower the heat if the pancakes begin to burn.

Serve with sautéed apples and enjoy!
