This slow cooker apricot chicken recipe is tender chicken thighs in a delicious sweet and savory sauce. A super easy dinner option!

Slow Cooker Apricot Chicken

bone-in skin-on chicken thighs (can also use boneless skinless chicken thighs)

salt and pepper

olive oil

onion

apricot preserves

soy sauce

dijon mustard

ginger

parsley

In a small bowl, whisk together the apricot preserves, soy sauce, dijon mustard and ginger. Set aside.

Heat the olive oil in a large pan over high heat. Season the chicken thighs on both sides with salt and pepper.

Place the chicken thighs skin side down in the pan and cook for 4-5 minutes on each side until deep golden brown. Add the onions to the pan and cook for 5 minutes or until softened.

Place the chicken thighs and onions in a slow cooker. Pour the apricot sauce over the chicken and onions.

Cook on LOW for 6-8 hours or HIGH for 3-4 hours. Sprinkle with parsley and serve.

Sticky Apricot Chicken and Broccoli

broccoli,

salt and black pepper

chicken breasts,

garlic powder

all-purpose flour

apricot jam/preserves

garlic clove, (minced)

brown sugar

chives, (for garnish)

brown jasmine rice, (for serving)

Preheat the oven to 425 degrees F. Place the broccoli on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 15 to 20 minutes, or until slightly charred.

While the broccoli cooks, prep the chicken. Toss the chicken with salt, pepper and garlic powder. Sprinkle the flour all over the chicken and toss well until it’s coated.

Heat a large skillet over medium heat and add the oil. Add the chicken in a single layer. Cook until browned on each side, about 5 to 6 minutes per side.

Whisk together the jam, minced garlic, soy sauce and brown sugar until combined. Once the chicken is brown, pour the sauce in. Stir to coat all the chicken. Simmer for 2 to 3 minutes, so the sauce thickens more. Sprinkle with chives. You can toss the broccoli in with the sauce or serve it on the side. I love to serve this with brown jasmine rice!

Kent pumpkin, peeled, deseeded, cut in 1cm-thick slices

Easy Apricot Chicken (only 5 ingredients)

chicken breasts ((boneless, skinless))

Catalina salad dressing ((or Russian dressing))

Dijon mustard

onion soup mix

Cut chicken breasts in half or into serving-sized portions.&nbsp;

In a medium-sized bowl, combine apricot preserves, Catalina dressing, onion soup mix, and Dijon mustard. Mix well.&nbsp;

Preheat oven to 375-degrees. Place chicken in a greased 9x13 baking dish. Pour apricot mixture evenly over chicken and bake 40-45 minutes or until chicken is cooked through.&nbsp;

Baked Instructions:

Place chicken in slow cooker. Pour apricot mixture over chicken and cook on high for 2-3 hours or on low heat for 4-6 hours. Serve as whole pieces or shred.&nbsp;

Slow Cooker Instructions:

Put 1/3 c. water in the Instant Pot. Place chicken in the water and then pour the apricot mixture over the top. Place lid (make sure release tab is set to "sealing") and cook on high pressure for 10 minutes and allow to natural release for additional 5 minutes.&nbsp;

Pressure Cooker (Instant Pot) Instructions:

Place chicken in a large sealing freezer bag. Place half of the apricot mixture in a bowl and set aside. Pour the rest of the apricot mixture in the bag with the chicken and place in refrigerator for 2-3 hours. Remove chicken from bag and discard marinade.&nbsp;

Grill chicken over medium-high heat for about 5-6 minutes on each side or until chicken is completely cooked through (internal temp of 165-degrees), brushing with remaining apricot mixture while grilling.&nbsp;

Easy Apricot Chicken

Apricot Chicken is a super easy and incredibly delicious dinner your whole family is going to love! Sweet and savory and full of flavor the chicken is tender and juicy.

Crockpot Apricot Chicken

Russian dressing (I used Wishbone brand)

Mix together the preserves, dressing and soup mix.

Place chicken in bottom of slow cooker; pour mixture over chicken.

Cook on Low and continue cooking for 3-4 hours.

Delicious and juicy chicken thighs prepared in a sweet apricot and barbecue sauce glaze. 

Barbecue Apricot Chicken

vegetable oil, (divided)

chicken thighs

chicken seasoning blend, (use more if you like,

garlic, (minced)

chicken

apricot preserves ((try using sugar-free apricot preserves))

barbecue sauce

green onions, (for garnish)

Preheat oven to 375˚F.

Heat 1 tablespoon vegetable oil in a large oven-safe skillet over medium heat.

Add the apricots to the hot oil and cook for 1 minute per side.

Remove apricots from skillet and set aside.

In the meantime, rub the seasoning all over the chicken thighs.

Add remaining vegetable oil to the same skillet and set over medium heat.

Add chicken thighs to the hot skillet and cook for 5 minutes per side. You may have to cook the chicken thighs in batches if they don't all fit in your skillet. Please don't crowd the pan.

Remove chicken thighs from the skillet and set aside.

Return skillet to heat and turn down to LOW.

Stir in minced garlic; cook and stir for 20 seconds.

Carefully pour in the chicken broth and, using a whisk, scrape up all the browned bits from the bottom of the skillet.

Whisk in the apricot preserves; whisk until fully incorporated.

Whisk in the barbecue sauce and cook for 1 to 2 minutes, or until slightly thickened.

Remove from heat and add chicken thighs and apricots back into the skillet. Flip the chicken thighs and apricots around so that they are covered with the sauce.

Loosely cover the skillet with aluminum foil and bake for 13 to 15 minutes, or until chicken is cooked through. Chicken is cooked when internal temperature reaches 165˚F. Use an Instant Read Thermometer to check for doneness.

Remove from oven and let stand a few minutes.

Spoon sauce over the chicken, garnish with green onions and serve.

For Apricot Chicken:

½ tsp kosher salt

¼ tsp ground black pepper

pkt dry onion soup mix

French dressing

thyme

For French Dressing:

ketchup

sugar

white vinegar

tbsp onion

lemon juice

dry mustard

paprika

For Onion Soup Mix:

onion flakes

tbsp beef bouillon granules

onion powder

parsley flakes

celery seed

⅛ tsp pepper

Season the chicken with salt and pepper and add it to the cast iron skillet, skin side down browning each side for 3 to 5 minutes before adding to the slow cooker skin side up.

In a bowl add the rest of the ingredients and whisk them together and pour half the sauce over the chicken, refrigerating the rest.

Cook on Low for 8 hours or on High for 4 hours then remove the chicken to a baking sheet.

400ml (13.5 fl oz) apricot nectar
400g (14 oz) apricot halves
½ tsp parsley

2 Tbsp cornstarch

There are a few ways that you can tweak this recipe so that it meets your needs. Below are a couple of suggestions on what you can do.

The apricot halves can be fresh, or they can come from a tin. If you do use tinned apricots, then make sure you drain all the fluids first. Keeping the fluids will likely make the dish end up with too much liquid.

Apricot jam is an excellent alternative to the nectar. It will result in a sweeter dish that may take your fancy. I highly recommend giving it a try if you like sweeter meals.

Heat half the oil in a large frying pan over high heat. Cook half the chicken for 3 minutes on each side or until browned, then transfer to a 5.5L slow cooker. Repeat with remaining oil and chicken.

Add onion to same pan, reduce heat to medium and cook for 8 minutes or until softened. Add soup mix, nectar, mustard and ginger, stirring to combine. Transfer to a 5.5L slow cooker and add thyme. Cover with lid, then cook on low for 5 hours, adding apricot halves for the last 20 minutes of cooking

Place couscous and 1 cup boiling water in a heatproof bowl, stirring to combine. Cover and stand for 5 minutes. Fluff with a fork to separate grains, then stir in parsley and season. Divide couscous among plates. Top with apricot chicken and broccolini, scatter over almonds, then serve.
