Plymouth gin

First swirl some absinthe in a glass, then pour it out. Next, combine three-fourths of an ounce of apricot liqueur, an ounce of Cocchi Aperitivo Americano and one and a half ounces of Plymouth gin. Stir with ice and strain into the glass. Spritz with lemon peel oil (by squeezing a zest of lemon over the drink) and garnish with a twist of lemon peel.

Make your own apricot liqueur with just 3 ingredients! Fresh, sweet, and fruity, this liqueur has a flavor comparable to Japanese Umeshu.

Apricot Liqueur

sugar (or light brown sugar)

vodka or rice wine ( it should be about 30% alcohol)

Start by placing your apricots in a large bowl. Cover with water and let them soak for 30-50 minutes. This step helps remove some of the pesticide residues.

Drain them. Drain the apricots well and transfer them to a plate lined with kitchen paper towels. Using your hands or a toothpick, remove the stems from the apricots and discard them.

Prepare the apricots

Place the rock sugar in a clean glass container. You can use one 33-ounce (1L) glass jar.

Add the apricots to the jar. Pour the liquor over the apricots and close the jar.

Let the liqueur steep in a dark and cool place for at least 3 months before enjoying it. Afterward, you can filter the liqueur, discard the apricots, and transfer the liquid to a clean glass bottle.

My family love Umeshu. So I just tried this recipe to see if it tastes close to the one we bought from the stores. To my surprise it tasted good. And was much cheaper than buying. Thank you.

Thank you for sharing this recipe.  Just bottled mine using peaches.  Can we add the stones from the peaches to the mixture?  Will this make it a bit sour?
