Egypt Arabic Salad (Tomato and Cucumber Salad)

tomatoes (diced)

cucumber (diced)

red onion (sliced thinly)

parsley (chopped)

mint (chopped)

Olive oil (to drizzle)

lemon (juice of)

salt

mix together the tomato, cucumber, onion, parsley and mint.

Drizzle over enough olive oil to lightly coat and squeeze over the fresh lemon juice.

Stir well and add salt to taste.

Try adding a touch of sumac for a wonderful added flavor to the salad.

This is a traditional middle eastern salad which is mixed with cucumbers, tomatoes, parsley, lettuce, sumac spices and olive oil.

Salt and Black Pepper

Chop the cucumber, tomatoes, lettuce and parsley

Transfer them into a large bowl

Add sumac spices and olive oil in that bowl. Mix them with the vegetable well.

Add salt and black pepper for taste

Serve it with any main course meal preferably meat and rice dish.

This hearty and healthy Mediterranean salad has such a lovely combination of flavors and textures that you will not get enough of.

Mediterranean Freekeh Salad

Freekeh, coarse

Vegetable broth

Bouillon cube

Tomato, chopped

Red onion, chopped

Colored Bell pepper, chopped

Persian cucumbers, chopped

Avocado, ripe, chopped

Parsley, chopped

Kalamata olives, no pits

Pomegranate Arils

oz Feta cheese, chopped

Olive oil

Spicy

tbsp Apple cider Vinegar (white or red vinegar work too)

Fresh Lemon's Juice

Garlic cloves, crushed

tbsp Dried Mint

tbsp Dried Oregano

tsp Pomegranate Molasses

Salt & Pepper

Cook the freekeh by combining it with the stock, salt, or bouillon. Bring to a light boil then simmer for 15-20 min until tender and the liquid has evaporated.

In the meantime, chop the vegetables and combine them together in a bowl. Set to the side.

Also, combine the dressing ingredients and stir them together very well. Set to the side.

Once the freekeh is cooked, let it cool until warm and no longer hot. You can speed this process by placing it in the fridge if you are short on time.

Once slightly cooled, toss in with the veggies and then coat with the dressing. Taste and see if any more salt is needed and enjoy!

This keeps well in the fridge in a container for several days. It even tastes better after hours when all the flavors really marry.

This easy chopped Arabic salad is perfect for every day, and it just about goes with every middle eastern dish out there! Make it with a simple dressing of lemon juice, olive oil, pomegranate molasses, mint and sumac and you&#39;ll never be bored of it.

Arabic Salad with Simple Dressing

To make the dressing, combine all ingredients in a mason jar and shake. The dressing will turn a dark brown. Store in the fridge and use as needed. This quantity will make enough for 2-3 salads.

For the salad, finely chop the cucumbers, tomato, bell pepper, onion and parsley.

Place the chopped vegetables in a bowl and drizzle over roughly 1/4 cup of the salad dressing.

Stir to combine. Taste and adjust for salt and more dressing as needed.

The pomegranate is a very subtle sweetness, the molasses was fairly tart. It really balanced the lemon juice, though. The mint was likewise subtle, but helped balance the tartness. 

I rarely say this, but I think the salad needed more salt. But you can always add more, you can't take it away. I recommend making as is, and adding salt after. All in all, I would wholeheartedly recommend!!

I always make differekt variations on this salad as I learned it from my Jordanian mother-in-law.
If I need to prepare it sometime before time to eat, I leave out the juicy middle part of the tomato also to avoid that sogginess.

I didn’t read the part that said the dressing was for 2-3 salads. No wonder my salad was so watery haha. It was nice though.

This salad was delicious and the dressing just finished it off. My husband doesn't usually eat raw tomatoes but he definitely did this time! I made the shawarma rice too and it was such a great pairing.
