This Cabbage Ramen Noodle Salad is a lightened up and healthier version of a popular crowd favorite.  Cabbage, edamame, carrots, almonds, and crunchy ramen noodles come together to make this salad full of nutrition and flavor!

Cabbage Ramen Noodle Salad

rice vinegar

Tbsp. agave nectar

Tbsp. Braggs liquid aminos (or soy sauce)

Tbsp. Sesame oil (optional)

garlic (minced)

red pepper flakes

green cabbage

red cabbage

carrots

scallions (chopped)

edamame

almonds

3-oz packets ramen noodles (without the seasoning packet)

Measure and mix together oil, rice vinegar, agave nectar, red pepper flakes, minced garlic, and Bragg&#039;s liquid aminos (or sub soy sauce) to create the Asian style dressing and set aside.

Toast slivered almonds in a dry pan for 2-3 minutes, or until toasted, fragrant, and golden.

Chop up your cabbage and other veggies (or just buy a 16 oz. pre-shredded coleslaw mix if you prefer!).  Add thawed shelled edamame and slivered almonds.  Toss to combine.

Add the dressing and mix well. If you want to prep ahead, refrigerate for up to 24 hours.

Just before serving, add broken pieces of ramen noodles, and toss well to coat. Garnish with sesame seeds or any optional extras.  Enjoy!

Asian Ramen Salad

ramen noodles (flavor packets removed)

green cabbage (sliced (2 cups))

purple cabbage (sliced (2 cups))

onions

olive oil

soy sauce

Tablespoons Honey

garlic

sesame oil

sesame seeds

salt and pepper

Preheat oven to 350 degrees. Crush up the ramen noodles and lay them on a sheet pan with the almonds. Toast until lightly brown for 10 minutes.

In a large bowl add the cabbage, carrots, green onions, and ramen and almonds.

To make the dressing: Whisk together the rice vinegar, olive oil, soy sauce, honey, garlic, sesame oil and seeds.

Pour over the salad and toss until it is combined.

16 oz bag coleslaw mix

Tbsp sesame seeds

c. sunflower seeds

c. sliced almonds

c. sliced green onions

vegetable oil

Tbsp Truvia

c. rice wine vinegar

Tbsp soy sauce

tsp sesame oil

tsp black pepper

garlic powder

Preheat oven to 425 degrees. Spread crumbled ramen noodles, sesame seeds, sunflower seeds and sliced almonds on a baking sheet. Bake for five minutes, stir and bake for 3-5 more minutes, until mixture is slightly toasted and golden. Set aside.

In a large bowl whisk together all the ingredients for the salad dressing.

Add coleslaw mix and ramen noodle mixture to the salad dressing and toss until combined.

Serve immediately.

unsalted butter

white vinegar or salad vinegar

sugar

(16-ounce) bags tri-color coleslaw mix

Open ramen packages and set seasoning packets aside. Place uncooked noodles in a large plastic bag and break up using your hands or the bottom of a cup.

Melt butter in a skillet over medium-high heat. Add noodles and almonds and cook, stirring, for 3–4 minutes, until toasted and lightly browned. Spread onto a baking sheet and let cool.

In a medium container with a lid mix oil, vinegar, sugar and contents of ramen seasoning packets. Close the lid tight and shake well. Set aside.

When ready to serve, place coleslaw in a large bowl. Top with noodle mixture and dressing. Mix and serve immediately.
