Wash, peel and slice the potatoes. Slice the potatoes somewhere in between 1/8 and 1/4 of an inch thick.

Add the chicken broth, sliced potatoes, onion, garlic, salt and pepper to the Instant Pot.

Cook on Manual HIGH for 0 minutes. Quick release the pressure.

Preheat the oven to BROIL

Add the evaporated milk to the Instant Pot, stirring carefully.

Sprinkle the cheese into the Instant Pot, stir until the cheese has melted into and thickened the sauce.

Transfer potatoes and sauce into an oven safe dish

Sprinkle additional cheese on top, if desired.

Broil until the sauce is bubbling and the top is golden brown.

Best if the potatoes cool for about 10 minutes before serving.

Garnish with parsley, if desired.

lbs red potatoes, (washed, but not peeled)

lbs Yukon gold potatoes, (washed, but not peeled)

gruyere cheese (shredded)

Preheat oven to 400 degrees F. &nbsp;Butter a 2 quart casserole dish and set aside. &nbsp;

Slice potatoes in 1/8" thin slices (I use this mandoline slicer), and set aside. &nbsp;

Add butter to medium saucepan, and heat over MED heat. &nbsp;When butter is melted, add garlic and saute for 1 minute, until fragrant. &nbsp;Add flour, whisk, and cook 1 minute. &nbsp;Slowly add milk, whisking continuously, until no lumps remain. &nbsp;Whisk over MED heat until mixture is thick and coats the back of a spoon.

Turn off heat, add cheeses, dry mustard, thyme, paprika, salt and pepper, and stir until smooth.

Layer half the potatoes and onion slices in prepared casserole dish, pour approximately half of the cheese sauce over potatoes and let sit for a minute. &nbsp;Repeat with remaining potatoes, onions, and cheese sauce.

Sprinkle top of potatoes with gruyere, cheddar and Parmesan. &nbsp;Spray aluminum foil with cooking spray, then cover the casserole dish (sprayed side down). &nbsp;Place casserole on a baking sheet and bake for 60 minutes.

Remove foil and bake uncovered an additional 25-30 minutes. &nbsp;Potatoes should be tender and cheese melted. &nbsp;Broil on HIGH for a minute or two for extra browning and crispiness.

Sprinkle top with chives and parsley and serve.

In this simple, cheesy sweet potato gratin, sweet potatoes, gruyere, cheddar, garlicky cream, and fresh thyme come together to create a delicious twist on the classic potato casserole.

Sweet Potato Gratin

Gruyére cheese

Preheat the oven to 375℉. Lightly grease a 9-inch baking dish with butter or nonstick baking spray. Set aside.

Using a mandoline, carefully slice the sweet potatoes horizontally into thin rounds, no larger than 1/8” thick. Place the sweet potato slices in a single layer in an overlapping pattern in the baking dish.

Set aside 1/2 cup of Gruyére cheese. Sprinkle the sweet potatoes with a third of the remaining Gruyére, cheddar, and Parmesan cheeses. Repeat with two more layers of potatoes and cheese.

Meanwhile, heat the olive oil to a medium sauce pan over medium heat until shimmering. Add the garlic, and cook, stirring occasionally, until golden and fragrant, about 5 minutes.

Add the cream, nutmeg, and thyme, and bring to a simmer. Cook, stirring often, until slightly thickened, about 5 minutes. Season with salt and pepper, to taste. Do not let come to a boil.

Stir in the reserved 1/2 cup of Gruyére cheese, until melted. Slowly pour the warm cream mixture over the sweet potoates, letting it sink in amongst the layers. Top with a bit of fresh thyme leaves.

Bake until the gratin is golden brown and bubbly and the potatoes are tender, about 45-50 minutes. If the gratin begins to brown too quickly, cover loosely with aluminum foil, as needed. Remove from the oven and let rest for 10-15 minutes before serving. Garnish with more fresh thyme. Enjoy!!

Cheddar Vegetable Au Gratin is one of those deliciously flavorful cheesy vegetable casseroles that are the perfect side dish for any time of the year. Combining Broccoli, cauliflower, carrots, and tons of creamy cheese sauce, all baked to perfection in one casserole dish.

Cheddar Vegetable Au Gratin

shredded sharp white cheddar cheese

Preheat the oven to 450 degrees F°

Pretreat a large baking dish with one tablespoon of butter and add the broccoli, cauliflower carrots, and onion. Roast until slightly golden browned, about 15 minutes.

In a medium saucepan, melt four tablespoons of butter, whisk in the flour and let it cook over medium heat for 3 minutes. Turn the heat off, whisk in the half-and-half, then turn the heat up to high and keep whisking to avoid the flour from clumping. Add the Cheddar cheese, kosher salt, pepper, nutmeg, and whisk until the cheese is melted.

Remove the broccoli, cauliflower, carrots, and onion from the oven and pour the Cheddar cheese mixture over the top. Sprinkle evenly with the parmesan cheese and bake until golden brown on 400 degrees F, 25 to 30 minutes.

Serve after cooling the casserole for about 5 minutes on a heat-safe area

Prepare 4, (1 cup) glass or ceramic cups by coating with non-stick spray and set aside.

In a medium size skillet melt butter over medium heat. Once melted, whisk in flour until smooth, about 1 minute. Gradually pour in milk and continue whisking until added and smooth.

Stir in green onions, garlic, salt and pepper and cook about 1 minute, until fragrant and bubbly throughout. Add cheese and stir until combined.

Add frozen potatoes to the cheese sauce and stir to coat evenly. Divid potato mixture between prepared cups and place cups in air fryer basket. Cook at 375 degrees F. for 9 to 10 minutes, until bubbly throughout and top is lightly browned.

Carefully remove cups with tongs or a hot pad (the containers will be hot). Serve hot and enjoy!

Preheat oven to 400 degrees F. Spray a 9" x 13" with non-stick spray and add half of the sliced potatoes, season with salt and pepper to taste and set aside.

In a large skillet, melt the butter and cook the onion and garlic until onions are tender and garlic is fragrant, about 3 to 5 minutes. Whisk in the flour until thick, then gradually whisk in the milk and chicken broth. Keep whisking until mixture is smooth and creamy. Season with salt, pepper and fresh thyme.

Top the sliced potatoes with half of the cream mixture, then top with half of the sharp cheddar cheese and parmesan cheese. Repeat the layers with more potatoes, the rest of the cream mixture and the rest of the shredded cheeses.

Cover tightly with foil and bake for 35 minutes. Remove the foil and continue baking for an additional 25 minutes. Turn the top broiler on for the last 3 to 5 minutes to brown the top if desired.

Let the potatoes sit for at least 5 minutes to let the sauce thicken up before slicing and serving. Enjoy!
