Line 2 baking sheets with parchment paper, set aside.

Mix cereal and marshmallows in a large bowl. Set aside.

Melt white chocolate and peanut butter together in a double boiler. I prefer using a double boiler for melting white chocolate so it will melt slow and smooth, but if you prefer the microwave, you can do it that way too.

Once the white chocolate is melted pour it over the cereal mixture and stir until completely coated.

Drop using a tablespoon onto the lined pans.

Sprinkle with mini chocolate chips, if desired.

Place in refrigerators until chocolate is set.

Cookies and Cups – Avalanche Cookies

Avalanche Cookies are easy no-bake crispy, chewy cookies filled with peanut butter and white chocolate flavor. Made in minutes by scooping a melted mixture onto a cookie sheet and letting it set -- so simple!

Avalanche Cookies

(1 ½ bags) white chocolate chips

tbsp salted butter

Rice Krispie cereal

tbsp caramel syrup

¼ cup mini semi-sweet chocolate chips

1½ tsp flaky sea salt

Line a large 18x13 inch sheet pan with parchment paper and set aside.

Over low heat in a medium sized saucepan, melt together the white chocolate chips, crunchy peanut butter, and butter. Stir frequently to keep from burning. Make sure the heat is on low or your chocolate may seize if heated too quickly.

Once melted, take the pan off heat and stir in the Rice Krispies cereal, mini marshmallows, and caramel syrup until completely incorporated.

Use a ¼ cup measuring cup or scoop to drop large balls of the mixture onto the prepared sheet pans.

Sprinkle all cookies with mini chocolate chips and sea salt before they start to set. (About ¼ teaspoon of chips and a few granules of sea salt on each cookie.)

Let cookies firm up at room temperature for at least 20-30 minutes before plating and serving.

Easy No Bake Avalanche Cookies Recipe + Video

Prepare 2 cookie sheets with silpat mats or parchment paper. Set aside.

Place chocolate chips in the freezer until ready to use.

Add Rice Krispies to a large bowl. Set aside.

Add almond bark to a microwave-safe bowl. Microwave at 50% power for 30 seconds at a time, stirring between each, until the bark is melted and smooth. Add peanut butter to the warm almond bark. Stir to combine.

Pour peanut butter mixture over rice krispies and stir to combine. Allow the mixture to cool to room temperature (or until barely warm).

Stir mini marshmallows into the cooled mixture, then add frozen chocolate chips and stir again to combine.

Using a 2-tablespoon sized scoop, portion treats onto the prepared cookie sheets, leaving some space between each (to prevent them from sticking together).

Allow cookies to sit in a cool place until firm. You can pop them in the fridge if your kitchen is too warm.
