Avec le houmous ou le taboulé, le moutabal ou baba ghanoush est le grand compagnon du mézzé. C'est une purée d’aubergine parfumé à la crème de sésame. On le consomme en dips, entrée ou accompagnement de grillades, il est servi généralement avec du pain pita, du pain grillé ou croûtons.

Préchauffage du four

Ajout d'ingrédient

Mettre 3 aubergines lavées sur la plaque du four dans le bol du Thermomix.

Précisions

Piquer les aubergines à plusieurs reprises à l'aide d'une fourchette .

Mise au four

Mettre dans le four pendant 30 min à 200°C. Retourner les aubergines au bout de 15 minutes. Ajuster la durée en fonction de votre four, la surface doit être un dorée et la chair de l’aubergine tendre.

Mettre 1 gousse d'ail dans le bol du Thermomix.

Ajouter 1 jus de citron dans le bol du Thermomix.

Ajouter 2 cuillères à soupe de fromage blanc dans le bol du Thermomix.

Ajouter 2 pincées de sel (à ajuster en fonction des goûts) dans le bol du Thermomix.

Ajouter 3 cuillères à soupe de crème de sésame - tahini dans le bol du Thermomix.

Ajout du couvercle

Ajoutez le couvercle avec le gobelet doseur

Programmation du Thermomix

Mélanger 30 sec/vitesse 3Augmentez progressivement la vitesse jusqu'à 7.

Transfert de la préparation

Parsemer de persil, de l'huile d'olive, du paprika ou cumin au moment de servir.

Classic Baba Ghanoush

eggplants ((about 3 lbs. total), roasted)

tahini (from light seeds, not "dark tahini")

garlic (roasted (or 1 raw, crushed))

lemons, juiced (or more to taste)

Roast the eggplant. You will find that roasting over an open flame will produce richer smoky flavor. For instructions, click here. Place the roasted eggplant pulp into a bowl with half of the smoky cooking liquid. Discard the skin and reserve the remaining cooking liquid. Let the eggplant return to room temperature.

Add tahini, garlic, fresh lemon juice, cumin, salt, cayenne pepper and 1 tbsp extra virgin olive oil to the bowl. Use a fork and/or spoon to mash together the mixture, using firm pressure to break up the tahini paste, roasted garlic, and any stringiness of the eggplant. Mix until well combined. Note- I don&#039;t recommend using a food processor here, the texture is most authentic when using a fork to mash.Taste the dip. Add additional tahini, lemon juice, salt or cayenne pepper, if desired. The cayenne is extremely spicy, so add with care.

Drizzle with olive oil, if desired - just a small amount will do. Garnish with fresh parsley, if desired. Serve as a dip with pita bread, crackers or chips. If you prefer a cold dip, chill in the refrigerator prior to garnish. Store refrigerated in an airtight container.

Dieses libanesisch inspirierte Baba Ghanoush Rezept ist ein köstlicher veganer Auberginen-Dip, der mit wenigen Zutaten einfach zubereitet werden kann und eine tolle Alternative zu Hummus ist!

Baba Ghanoush Rezept

Auberginen (ca. 600 g)

EL Tahini (60 g)

Knoblauchzehen

EL Zitronensaft

½ TL Salz (oder nach Geschmack)

⅓ TL Pfeffer (oder nach Geschmack)

½ TL Kreuzkümmel (optional)

Olivenöl (Paprika- oder Chilipulver, Petersilie, Minze, Sesam, Granatapfel)

Den Ofen auf 200 °C Ober-/Unterhitze vorheizen und ein Backblech mit Backpapier auslegen.

Die Auberginen halbieren. Das Fruchtfleisch mit der Messerspitze leicht rautenförmig einritzen und mit etwas Olivenöl bepinseln. Mit der Schnittseite nach unten zeigend auf das vorbereitete Backblech legen und ca. 35 Minuten backen, bis das Innere zart ist und die Haut zusammenfällt (dies kann länger dauern, wenn man eine große Aubergine verwendet).

Anschließend die Auberginen einige Minuten abkühlen lassen. Danach die Auberginen umdrehen, das Fruchtfleisch mit einem großen Löffel ausschöpfen und in eine Küchenmaschine oder einen Mixer geben. Tahini, Knoblauchzehen, Zitronensaft, Salz, Pfeffer und Kreuzkümmel hinzu geben und cremig pürieren.

Den Auberginen-Dip nach Belieben mit Olivenöl, Paprika- oder Chilipulver, Petersilie, Sesam, Granatapfelkerne und Minze garnieren. Mit Fladenbrot, Gemüse oder Crackern servieren.
