Whole30 Bacon Egg bites, inspired by the popular Starbucks Bacon and Gruyere Egg Bites, are perfect for meal prep. Learn how to make bacon egg bites with just a handful of ingredients and 15 minutes of prep time.

Bacon Egg Bites

Eggs (large)

Bacon ((Whole30 Compatible) chopped into small pieces)

raw cashews

coconut milk (full fat)

onion powder

garlic powder

paprika

salt (or salt

coarse black pepper

yeast

Cooking spray

Preheat oven to 300°F

Add all of the cashew cream ingredients to a blender or blender cup and blend until it forms a smooth paste

Then add eggs to a mixing bowl, followed by all of the cashew cream and whisk to combine

Once eggs and cashew cream are mixed together well, scoop mixture into a muffin tin greased with cooking spray.

Then top with pieces of bacon

Next place the muffin tin, into another baking pan, then place on the middle rack in the oven, then and pour about 3 cups of hot water into the baking pan until it come about half way up the muffin tin.

Bake at 300°F for 25 minutes, or until the eggs are completely cooked

Allow to cool completely before removing from the muffin tin

A delightful protein-packed breakfast or snack! Made with eggs, cottage cheese, bacon, and shredded cheese, they are delicious creamy, moist, and so flavorful.

Cottage Cheese Egg Bites

bacon bits (cooked)

eggs

cottage cheese

Colby jack cheese (shredded)

salt

¼ tsp black pepper pepper

cooking oil spray

Preheat oven to 325℉.

In a medium sized mixing bowl, crack and whisk eggs.

Add in bacon, cottage cheese, shredded cheese, salt, and pepper. Mix to combine.

Spray a 12 cup muffin pan with cooking oil.

Equally distribute the egg mixture among the 12 muffin cups.

Place a pan of water on the lower rack of the oven.

Place the egg bites in the upper rack of the oven and bake 23-25 minutes.

Use a toothpick to check for doneness. Toothpick should come out of the egg bite clean.

Let the egg bites cool for a couple of minutes. Remove egg bites from the muffin pan before they completely cool.

Serve and enjoy!

This turned out delicious 😋!!!  I doubled the recipe which made 24, used sausage instead of bacon and added green chili peppers.   I also added a little bit of hash browns to the bottom of my tins because I didn’t want them to stick.   They truly are delicious!!!

These were light and fluffy.  Added chopped Swiss chard, onion and peppers.  No salt added and I found they were perfectly seasoned.  Oh also added 1/2 cup frozen black beans.  Will definitely make again.

Great recipe.  I added fresh spinach and my family loved it.
