This easy bacon grease gravy recipe is full of rich flavor from cooked bacon and caramelized onions. It&#39;s perfect for drizzling on mashed potatoes, biscuits, Thanksgiving turkey, and so much more!

unsalted butter

thick-sliced smoked bacon, (chopped)

all-purpose flour

In a large skillet over medium heat, cook the chopped bacon until browned. Transfer the bacon pieces with a slotted spoon to paper towels to drain. Pour out any drippings in excess of 2 tablespoons.

In a large measuring cup or bowl, combine the cooked bacon with the stock. Allow the bacon to soak in the stock for 15 minutes. This will soften the bacon and infuse the stock with flavor.

Cook the onions in the butter until golden brown and starting to caramelize.

Sprinkle the flour over the mixture and whisk it to blend. Cook, whisking constantly, until the flour becomes a light golden color, about 2 minutes.

Still stirring, slowly add the stock-bacon mixture to the skillet. Bring to a boil and cook, whisking constantly, until the gravy thickens slightly.

Transfer the mixture in batches to a blender or food processor. Process on high until the bacon breaks down and is pureed into the broth, about 3 minutes.

Pour through a metal strainer, pressing on solids, back into the skillet and continue cooking over medium heat, whisking constantly, until mixture bubbles. If it&#39;s too thick, add a little more stock until it&#39;s the consistency you like. If it&#39;s too thin, cook for 5 to 10 minutes until it reduces slightly and thickens.

Season the gravy with salt and pepper to taste. Serve immediately. Makes about 3 cups.

In a medium bowl, squeeze the juice from the grated ginger (compost or discard remaining fibers). Add the butter, bacon grease, brown sugar, egg and molasses and stir until well blended.

In a separate bowl, whisk together the flour, soda, salt, cinnamon, ginger and cloves. Mix the dry ingredients into the butter mixture and stir until well blended. Sprinkle with the chopped crystallized ginger and mix well. Refrigerate, covered, for 1 hour.

Roll in balls using a dining teaspoon. Roll in crystal sugar or granulated sugar and arrange on the prepared cookie sheet about 2 inches apart.

Bake until just starting to brown around the edges, about 10 to 12 minutes. Cool on a wire rack. Store cookies in a covered container in the refrigerator. They taste best if they're eaten within 5 days. Makes about 3 dozen.

Cut the bacon in 1-inch pieces using kitchen scissors or a sharp knife.

Fry the bacon in a large skillet over medium heat until crispy and golden brown.

Use a slotted spoon to transfer the cooked bacon to paper towels to drain. Allow the pan to cool off the burner for about 10 minutes, and do not drain the fat from the pan.

Measure 3 tablespoons of bacon fat from the pan and transfer to a large, heavy bottom pot.

Add the popcorn kernels to the pot, cover, and turn the heat up to medium.

Cook the popcorn. As the kernels start to pop, shake the pan gently. This will keep the popcorn from burning or sticking on the bottom of the pan.

As soon as the popping slows to about 1 pop per second, pull the pan off the stove, carefully remove the lid to let the steam escape, and pour the popped corn into a large bowl. Drizzle the popcorn with the melted butter and use tongs to distribute the butter over the popcorn. Sprinkle with salt and pepper.

Sprinkle the warm popcorn with finely shredded cheddar and Parmesan cheeses. Toss well to combine. 

Add cooked bacon bits to the bowl and toss to combine. Serve and enjoy! Makes about 6 generous servings.
