Bacon Wrapped Stuffed Chicken Breast (One Pan Meal)

Cooking spray

chicken breasts

cream cheese (softened)

cheddar cheese

mozzarella cheese

parsley

garlic powder

salt and pepper

bacon

potatoes

Preheat the oven to 400 degrees F. Line a sheet pan with foil and coat with cooking spray.

Using a small knife, cut a slit lengthwise partway across each chicken breast to create a deep pocket.

In a small bowl mix together the cream cheese, cheddar, mozzarella, parsley and garlic powder. Season with salt and pepper to taste.

Spoon the cheese mixture evenly into the pocket of each chicken breast. Alternatively you can put the filling into a plastic bag and snip the tip to create a makeshift pastry bag to squeeze the filling into the chicken.

Season the top of each chicken breast with salt and pepper then wrap 2 slices of bacon around each chicken breast.

Place the chicken breasts on the sheet pan; scatter the potatoes around the chicken. Coat the potatoes in cooking spray and season with salt and pepper.

Place in the oven and bake for 40 minutes. Broil for an additional 3-5 minutes or until bacon is browned and crispy.

Serve immediately, with chopped parsley as a garnish if desired.

Sweet, savory, juicy, and awesomely delicious bacon wrapped chicken dinner prepared with just 5 main ingredients! 

Maple-Glazed Bacon Wrapped Chicken Breasts

(4 ounces each) boneless, skinless chicken breasts

salt and fresh ground pepper, (to taste)

sweet or smoked paprika

onion powder

sugar free low carb maple syrup

dijon mustard

cracked pepper, (for topping, optional)

chopped fresh parsley, (for garnish, optional)

Preheat oven to 425˚F.

Lightly grease a 9x13 baking dish with butter and set aside.

In a small mixing bowl combine salt, pepper, paprika, garlic powder, and onion powder.

Rub each chicken breast with prepared seasoning mix.

Wrap each chicken breast with bacon slices and transfer to prepared baking dish, seam-side down.

In a small mixing bowl whisk together maple syrup and dijon mustard; whisk until well combined.

Brush each chicken breast with maple syrup glaze.

Crack fresh ground pepper over each chicken breast.

Bake for 22 to 25 minutes at 425˚F, or until done, and brush/baste with the juices couple of times during baking. Chicken is done when internal temperature reaches 165˚F. I suggest to start checking for doneness at around the 20-minute mark.

If the bacon is not fully caramelized after cooking, place the baking dish under the broiler for 2 minutes to finish it off.

Remove from oven and let stand 5 to 8 minutes.

Spoon juices over chicken and garnish with chopped parsley.

Serve.

You may or may not know this but I was quite the good employee for outback steakhouse. I started out as a server and ended as a bartender. This was in the 90’s and when outback was at its hay day and most popular. One of the things I learned how to make was the honey mustard dressing. So, this recipe is not alice springs chicken, however I actually know how to make that recipe too. Here is my Alice Springs Chicken Recipe. This is my own little rendition of a chicken rollatini wrapped in bacon and slathered in outback steakhouse honey mustard dressing. Bacon Wrapped Honey Mustard Chicken

tsp Lawry's seasoning salt

Salt & pepper

boneless skinless chicken thighs

mayo

tbsp dijon mustard

Mix together onion powder, Lawry's seasoning salt, dried parsley, garlic powder, smoked paprika, black pepper, a pinch of salt, and pat seasoning blend into the back and front of the chicken thighs.

To make the Outback honey mustard sauce mix together mayo, honey, and dijon mustard.

Use about 1/4 of the honey mustard sauce to coat both sides of the chicken and set aside the rest of the sauce for later.

Roll your chicken up and take one piece of bacon and wrap it around the rolled up chicken and top with black pepper. Repeat this process on the other pieces of chicken.

Place the bacon wrapped chicken on a rack on a baking sheet and bake at 450°F for about 30 minutes.

20 minutes into the cooking time take chicken out of the oven and baste it with some of the honey mustard sauce, then put back into the oven to finish cooking.

Serve over mashed potatoes and top with parsley and honey mustard. Enjoy!!!
