Best Anytime Baked Chicken Meatballs

cup grated Parmesan

tablespoons olive oil (optional – makes meatballs more moist and yummy)

teaspoon garlic powder

onion powder

teaspoon salt

black pepper to taste

seasonings optional!

Prep

Preheat the oven to 400 degrees. Line a baking sheet with foil and a little cooking spray.

Mix all the ingredients together in a mixing bowl.

I used nutritional yeast  instead of cheese in mine- came out great

I'm in Seattle, and some of the stores here sell gluten-free panko. As well as gluten-free breadcrumbs. Always in my pantry! Worth looking for!

These were great!  I made them (mostly) as written with ground chicken except I added a little less than 1/2 a tap of Italian herb blend and I used 1/4 cup of grated Parmesan rather than 1/2.  I used unseasoned Pablo.  They came out delicious.

OMG - how did you know I was looking for a chicken meatball recipe to make today?!?! Perfect timing as I was looking for inspiration to make healthy chicken meatballs for my 11.5mo old daughter! I loved how EASY your recipe was and it was super tastey! Since I was making these for my baby, I decided to omit the salt/pepper and added in a small organic zucchini (grated and moisture removed). Healthy Baked Chicken Meatballs with Spinach. Easy oven method for Italian chicken meatballs that are juicy and packed with flavor!

Baked Chicken Meatballs

chicken (I like 93% lean)

whole wheat panko breadcrumbs

Parmesan

olive oil (divided)

oregano

garlic powder

salt

red pepper flakes

tomato paste (divided)

parsley

spinach

Tomato sauce

whole wheat pasta, zucchini, or other vegetable noodles

Buns for sandwiches (for sandwiches)

Toothpicks (to serve as an appetizer)

Place a rack in the upper third of the oven and preheat the oven to 400 degrees F. Lightly coat a 9x13-inch baking dish or rimmed baking sheet with nonstick spray.

Beat the egg in the bottom of a large bowl. Add the chicken, breadcrumbs, Parmesan, 1 tablespoon olive oil, oregano, garlic powder, onion powder, salt, red pepper flakes, parsley, and 1 tablespoon tomato paste.

Finely chop the spinach so that it is in small bits, then add it to the bowl. With a fork or your hands (I’m all about the hands here), mix until well combined, being careful not to compact the meat. Shape the mixture into 12 meatballs and arrange in the prepared baking dish so that they do not touch.

In a small bowl, whisk together the remaining 1 tablespoon olive oil and 1 tablespoon tomato paste. It won’t be perfectly smooth but will bake up just fine. Brush over the top of the meatballs.

Bake the meatballs in the upper third of the oven for 18 to 22 minutes, until cooked through. Serve hot with pasta, zucchini noodles, inside a hoagie bun, or any way you choose!

Easy Italian Chicken Meatballs Recipe

lb ground chicken (or ground turkey, if you like)

Preheat the oven to 400 degrees F. And lightly brush a large sheet pan with extra virgin olive oil.

In a large mixing bowl, add the sliced onions and tomatoes. Sprinkle with kosher salt and about 1 1/2 tsp fresh thyme (leave the rest of the thyme for later). Drizzle a bit of extra virgin olive oil and toss to combine. Transfer to the prepared sheet-pan and spread well.

In the same mixing bowl, now prepare the chicken meatball mixture. Add ground chicken, garlic, egg, remaining 1 1/2 tsp thyme, Parmesan cheese, and bread crumbs. Add oregano, paprika, pinch of salt and black pepper, and 1 cup fresh chopped parsley. Drizzle a bit of extra virgin olive oil. Using clean hands (remove any rings, of course), mix well until the chicken meatball mixture is well-combined.

Form the mixture into small chicken meatballs about 1 1/2 tbsp each (whatever size you choose, stick to it for even cooking.) Arrange the chicken meatballs on the same sheet pan with the tomatoes and onions (nestle them in between the veggies, making sure not to crowd the meatballs.)

Bake for 30 minutes or so, or until meatballs begin to turn a beautiful golden brown and the tomatoes collapse. (If after they've baked, you'd like a little more "crust" or color to your meatballs, you can remove them from the oven briefly and brush the meatballs with extra virgin olive oil. Turn oven heat up to 450 degrees F and return the meatballs to the oven for 5 more minutes or so, watch carefully.)

Pour the glaze over the meatballs on the baking sheet and toss to coat.

Serve

Serve meatballs as an appetizer or with rice and a vegetable.

Chicken Piccata Meatballs

Italian seasoning

parsley, (leaves chopped)

Kosher salt and black pepper

Extra virgin olive oil ((about 1/2 cup))

lemons, (1 zested, both juiced)

dry white wine or chicken broth,

capers, (drained and rinsed)

Season the chicken: In a medium bowl, add the chicken, egg, Italian seasoning, paprika, 2 minced garlic cloves, 1/2 of the chopped parsley leaves, and 1/4 cup of the breadcrumbs. Add a big pinch of kosher salt and black pepper (about 1/2 teaspoon each) and a drizzle of olive oil. Mix to combine.

Bread the meatballs: Onto a large plate, spread the remaining 1/4  cup breadcrumbs.

Shape the meatballs: Form the chicken mixture into small balls (about 1 heaping tablespoon each). Roll them in the breadcrumbs to coat.

Sear the meatballs: Into a large nonstick pan set over medium heat, add enough olive oil to coat (about 3 tablespoons). Once the oil begins to shimmer, arrange the meatballs in a layer without touching. Sear, turning until each side is golden brown, about 3 minutes per side. (You do not need to fully cook the chicken meatballs at this point, they will finish cooking in the sauce.) Transfer to a plate lined with paper towels to drain.

Make the sauce: Leaving any leftover chicken fat in the pan, add 3 tablespoons of olive oil and the ghee or butter. Stir over medium-high heat until melted, then add the garlic. Stir until fragrant, then add the lemon juice, white wine, and capers. Season with salt to taste, then ring the sauce to a boil.

Finish the meatballs: Turn the heat to low and nestle the meatballs back in the pan. Toss or spoon a bit of the sauce on top. Cover and simmer until the meatballs are cooked through and are no longer pink in the center, about 5 minutes.

Serve: Sprinkle on the lemon zest and remaining chopped parsley (about 2 tablespoons). Serve hot, with plenty of piccata sauce spooned over top.

Delicious! I let the meatballs simmer for longer than suggested, and the sauce thickened up and made them taste amazing. My former-chef husband was very impressed.

The sauce ends up being super oily. Why so much olive oil and then ghee on top of it?

This dish is spectacular!!! I only wish I had doubled the recipe. I love lemon so for me this was truly delicious and my husband absolutely loved it as well.

I love chicken piccata but this was a really great spin on it.  Served it over bastamanti rice and it was so good—my husband said I can make this whenever I want!  Next time I’ll make more sauce for the rice to soak up.  Delicious!
