Poblano Pepper Chili Rellenos Casserole is an easier version of the popular Chili Rellenos entree. It's creamy, cheesy, and my version if filled with chicken and great for breakfast or dinner. My Mexican inspired casserole is perfect for feeding a crowd, special occasions, or easy weeknight family meals.

Poblano Pepper Chili Rellenos Casserole

poblano peppers

cheddar colby cheese (shredded)

pepper jack cheese (shredded)

eggs

flour*

milk

salt

dry mustard

Roast, peel, and deseed poblano peppers. 

Preheat oven to  350 degrees and spray an 8x12-inch glass baking dish with non-stick spray.

Spread the peppers out in a single layer on the bottom of the baking dish.

Sprinkle the cheddar/Colby cheese over the peppers.

In a bowl, combine the eggs, flour, milk, salt, and mustard. Whisk until flour clumps are gone. (some may remain)

Pour egg mixture over cheese.

Top with pepper jack cheese.

Bake uncovered 30 minutes at 350 degrees F or until firm and set in the center.

Remove and allow to cool for 5 minutes before serving.

Preheat oven to 375°F. Grease insides of a 9x13-inch baking pan with non-stick cooking spray.

In a large skillet over medium heat, cook the sausage until browned, crumbling it with a spatula as it cooks.

Add potatoes, sausage, bacon and cheese to the casserole dish. Toss to combine.

In a large bowl combine eggs, milk, garlic, salt and pepper. Whisk until completely combined. Pour the egg mixture over the hash brown mixture.

Bake for 35-40 minutes until a knife inserted in the center comes out clean.

Preheat oven to 350 degrees F. Grease a 2-quart baking dish.

In a large bowl, whisk eggs. I use an electric mixer with the whisk attachment.

Add flour, baking powder, salt,&nbsp;and pepper and mix well.&nbsp;Stir in cottage cheese, shredded cheese, and pimento.

Pour in egg mixture into prepared pan and bake&nbsp;for 45-55 minutes. Cook time will vary depending on the shape of your baking dish. Allow more time for deep dishes. Cover the top with foil if it starts getting more brown that you prefer.

Let cool for 5-10 minutes before serving.

Cups frozen cubed potatoes

Tablespoons butter

Tablespoons milk

Melt butter in a microwave-safe pie dish; add potatoes and microwave 8 to 10 minutes.

Cook bacon while potatoes are cooking in the microwave. Stir together eggs, milk, salt, pepper, and pepper jack cheese; pour over potatoes.

Bake in a 350°F oven for 18 to 20 until eggs are almost set.

Remove from oven and sprinkle with Cheddar cheese and bacon.

Return to oven another 3 to 5 minutes until eggs are set and cheese is melted. Serve immediately.
