Lemon butter baked fish is the perfect, easy sheet pan dinner recipe. Baked with asparagus and a delicious lemon butter sauce.&nbsp;

Easy lemon butter baked fish

800 g/1,7lbs White fish, boned ((Approximately 200 grams/7 ounces per person))

tbsp butter

garlic

lemon juice

tsp dried oregano/thyme

salt and pepper (to taste)

asparagus (washed and trimmed)

Pre-heat the oven to 200ºC/400ºF and line a sheet pan with parchment/baking paper.&nbsp;

Combine the butter, lemon, garlic and herbs in a saucepan and bring to a simmer. Cook for 2-3 minutes until fragrant then remove from the heat and set aside to cool slightly.&nbsp;

Place the fish and asparagus onto the lined sheet pan then season with salt and pepper.&nbsp;

Pour the lemon butter sauce over the fish and asparagus and top the fish with lemon slices (optional).&nbsp;

Place in the oven and bake for 10-12 minutes or until the fish and asparagus are cooked. Fish is cooked when it flakes easily and the flesh is opaque, white throughout.&nbsp;

Remove from the oven and serve.&nbsp;

mayo

Dijon mustard

unsalted butter

olive oil

panko breadcrumbs

lemon

salt

black pepper

Preheat oven to 400°F and line a baking sheet with parchment paper (or with greased foil). Place the cod fillets on the parchment (if there is skin, place them skin-side down).

Season the cod lightly with salt and pepper.

In a small bowl, stir together the mayo and mustard. Spread the mixture in an even layer on top of the cod fillets.

To the same bowl, add the butter and microwave for 30 seconds until the butter is melted. Stir in the olive oil and breadcrumbs and stir to combine.

Zest the lemon and add the zest to the breadcrumbs. Season with the salt and pepper and stir to combine.

Gently pat the breadcrumb mixture into the mayo-mustard layer on top of the fish.

Bake the fish for 10-12 minutes or until the flesh is opaque and flakes easily with a fork and the breadcrumbs are golden brown and toasty.

Serve hot and garnished with a fresh squeeze of lemon juice and some lemon slices on the side. We love this fish with a simple green vegetable on the side, such as broccoli, green beans, or even a light side salad.

This recipe is fantastic. Easy (foolproof, as you say) and with wonderful flavor. I've made this with cod, haddock, and salmon. I may never cook fish another way!

What I dislike more than anything else with fish is the breading part. I'm going to skip the dipping and dredging from now on and just do this! It came out perfect and delicious and SO simple. Thanks!

Made this for first time with wild cod--it was great!  I don't usually use mayo and did not have any on hand---but did have plain Greek yogurt which apparently works as a great substitute.   Love the fact that the breading sits on top.  What a great recipe---Thanks!

Pour the stock over the couscous in a bowl, cover with cling film and leave until the couscous has soaked up the liquid. Stir the toasted pine nuts into the couscous along with parsley, lemon zest and juice. Add salt and pepper to taste.

Heat oven to 200C/180C fan/gas 6. Lightly oil 2 sheets of foil. Season the trout, then make 2 ‘sandwiches’ of 2 fillets with the couscous in the middle. Repeat with the rest of the trout and the couscous. Wrap the ‘sandwiches’ individually in foil, then bake for 15-20 mins. Serve with potatoes and salad.

Broiled Walleye Fillets

Walleye 1lb

Garlic and herb seasoning 1 pinch

Butter 5 tbsp

Salt

Heat the broiler and prepare foil wraps

Preheat the broiler to medium-high. Cut two large squares of aluminum foil; one square should be enough to lay all the fillets in comfortably with a couple of inches spare around the edges.


Prepare the fillets

Lay the fish fillets, skin-side down, in the center of one of the foil squares. Brush the fillets with the melted butter and sprinkle the seasoning and salt over the top.


Make the foil parcel

Lay the second square of foil over the top and fold the edges of the bottom square up and over. Fold again so that you have a leak-proof parcel. 


Cook the fillets

Place the parcel in the broiler. Cook for about 7 minutes, turn the parcel over and cook for another 7 minutes until the fish is soft and flaky. 


Serving Broiled Walleye Fillets

Serve the fillets with the buttery juices drizzled over the top.

Absolutely delicious! I made this last night and it was the best cod we’ve ever had. My husband, who’s usually less than enthusiastic about fish had seconds. This is now my go-to way to prepare cod and similar fish.

My partner and I usually don’t like cod, since it’s often rubbery and flavorless. But dang if this recipe didn’t crack the CODe! We did ours from frozen, same steps but it just took a little longer to cook (20-25min). I served with some brown rice and roast asparagus (cooked in the oven at the same temp with the cod). You really made cod taste good, thank you!

Easy Baked Fish

Preheat the oven to 425 degrees Fahrenheit. Allow the fish to stand at room temperature while prepping the vegetables.

Chop the tomatoes, olives, red onion and garlic, as noted above.

Place the chopped vegetables, drained capers, and 1 tablespoon chopped parsley in the bottom of a 9 x 13″ baking dish. Mix with 1 tablespoon olive oil, 1/4 teaspoon salt, and fresh ground black pepper.

Pat the fish dry. Rub it with 1 tablespoon olive oil and 3/4 teaspoon kosher salt, split between the filets. Sprinkle both with the oregano and a few grinds black pepper. Place the fillets on top of the vegetables in the pan, then gently drizzle the fillets with the lemon juice.

Place the pan in the oven and bake for 20 to 25 minutes (depending on the thickness of the fish; check at 15 minutes for very thin fillets), until the fish is flaky and the internal temperature is 140 degrees Fahrenheit when measured with a food thermometer. Garnish with the remaining 1 tablespoon chopped parsley and serve immediately, adding a few spoonful of vegetables to each plate (over the top or next to the fish).

Made with two thick cut Atlantic cod fillets and used black olives as I keep those on hand. Used up the last of my summer cherry tomatoes. I liked how easy this was to put together and quick to cook. I roasted some broccoli on a separate pan at the same time and it was a perfect light and quick dinner for two.

I made this last night and it was obscenely delicious and so unbelievably easy. It will definitely be in heavy rotation for a while!

fresh skinless pollock fillets (about 200 grams)

Heat oven to 200C/180C fan/gas 6. Tip the potatoes, onion, garlic, oregano and olive oil into a roasting tin, season, then mix together with your hands to coat everything in the oil. Roast for 15 mins, turn everything over and bake for 15 mins more.

Add the lemon and tomatoes, and roast for 10 mins, then top with the fish fillets and cook for 10 mins more. Serve with parsley scattered over.
