This baked Greek Chicken and Potatoes is an easy dinner recipe with just 10 minutes of prep!

Greek Chicken and Potatoes

lemon juice ((from about 1 lemon))

red wine vinegar

honey

olive oil

garlic cloves,

oregano ((or about 2 tablespoons chopped fresh oregano))

lb. baby red potatoes, quartered

Preheat oven to 425 degrees F.

Line a rimmed baking sheet with foil (for easy clean-up) and spray with cooking spray or brush with olive oil. Arrange lemon slices and onion slices on the baking sheet. Pat chicken dry; arrange (skin-side up) on top of the lemons and onions.

In a small bowl, whisk together lemon juice, vinegar, honey, olive oil, garlic and oregano. Set aside half of the marinade in a bowl. Spoon or brush the remaining sauce over chicken. Season chicken liberally with salt and pepper.

Roast chicken for 45 minutes – 1 hour, or until the meat reaches an internal temperature of 165 degrees F. If the chicken starts to turn too dark while it’s still cooking, shield loosely with foil.

Toss the potatoes with the remaining dressing. Spread on a foil-lined baking sheet that has been sprayed with cooking spray. Season with salt and pepper. Add the potatoes to the oven during the final 25-30 minutes, stirring every 10 minutes, until the potatoes are crispy and golden brown.

Preheat oven to 450

Zest one lemon. Place zest in a large bowl and add 1 Tbsp. olive oil. Add in the red onion slices and kalamata olives and toss to coat. Place onions and olives in the bottom of a baking dish.

Cut the chicken breasts into tenders (slice them parallel to your work service, then cut each half into 3 pieces. Season the tenders with salt, pepper,and Greek seasoning (if using) then place them on top of the bed of onions and olives. Tuck the peeled garlic cloves under the chicken to keep them from burning.

Spread the hummus evenly over the top of the chicken breasts. Squeeze the juice out of the zested lemon over the top of the chicken and onions. Sprinkle the paprika over the top. Add the zested and squeezed lemon rinds to the pan.

Bake uncovered for 15 minutes. Add the tomatoes to the perimeter of the pan, then drizzle the balsamic vinegar over the top of the tomatoes. Return to the oven for another 15-20 minutes, or until chicken is cooked through.

Serve on a bed of spinach, topped with feta cheese and with extra lemon wedges for squeezing. Optional accompaniments: Roasted red peppers, pepperoncinis, pita bread with hummus, or cucumbers.

Easy Baked Greek Chicken Recipe

lbs chicken breast (boneless skinless)

plain Greek yogurt

oregano

garlic (minced)

lemon (juice of)

In a large bowl mix yogurt, oregano, olive oil, garlic, lemon juice, salt and pepper.

Add the chicken and using a pair or tongs, flip it around to make sure it&#039;s fully coated with the yogurt marinade.

Cover and marinate for at least one hour up to overnight in the fridge.

When you&#039;re ready to cook, take the chicken out of the fridge and place it on the counter.

Preheat the oven to 400°F. Line a baking sheet with aluminum foil and coat with cooking spray.

Using a pair of tongs, take the chicken out of the marinade and shake off the excess marinade and place it on the baking sheet.

Bake in the oven for 30 minutes until the internal temperature reaches 165°F. Let it sit for 5 minutes before slicing. Serve with your favorite side dish.

kg (2lbs) chicken breasts (boneless, skinless)

lemon juice

garlic (finely chopped/crushed)

½ tsp sweet paprika

tsp rosemary (finely chopped)

½ tsp pepper

Slice the chicken into bite-sized chunks, approximately 5cm/2in in size.

Mix all the marinade ingredients together and pour over the chicken.

Toss to coat the chicken in the marinade then cover and marinade for at least 30 minutes but up to 24 hours in the fridge.

Soak bamboo skewers in hot water for 30 minutes or alternatively use metal skewers.

Thread marinated chicken and red onion onto skewers then brush with the remaining marinade.

Cook on a hot grill or in a griddle pan on the stove for 2-3 minutes per side until the chicken is golden brown and cooked through, approximately 10 minutes in total.

Remove from the heat and allow to rest for 5 minutes before serving.
