These baked potato slices are topped with melted cheese, crispy bacon, Italian seasoning, and served with sour cream for dipping! Crispy on the outside, warm and soft on the inside! 

Baked Potato Slices

russet potatoes (Scrubbed clean)

vegetable oil (Canola

Salt/Pepper (to taste)

cheddar cheese (shredded)

bacon (uncooked)

Tablespoon Italian Seasoning

green onions (diced)

Preheat oven to 375 degrees. Take out the bacon and set it aside for 5 minutes (this makes it crispier).

Cut the potatoes into 3/4 inch slices. Use a pastry brush to lightly coat the tops with oil. Flip and repeat. Season with salt and pepper.

Bake the slices on a baking sheet in the oven for 25 minutes.

As the potatoes bake, cook the bacon over low heat. Use kitchen tongs to flip them periodically for even cooking. Set them aside once finished, leave the bacon drippings.

Remove the potato slices from the oven and lightly brush with bacon drippings. Flip and repeat. Bake for 10 more minutes. Meanwhile, crumble the bacon.

Decrease the heat to 350 degrees. Top the potatoes with grated cheese and crumbled bacon. Place back in the oven until the cheese is melted, about 5 minutes.

Remove the slices from the oven. Sprinkle with Italian seasoning, then top with green onions. Serve with sour cream and enjoy!

These Oven Baked Potato Slices are easy to make and versatile. You can serve them as a side dish or with a dip as a snack! They are crispy on the outside and soft on the inside.

Oven Baked Potato Slices

russet potatoes

olive oil

salt

cracked pepper

Preheat the oven to 400°F/200°C.&nbsp;

Peel the potatoes. Wash them. Pat them dry. Slice them thinly and evenly with a knife or even better: with a mandoline slicer.&nbsp;

Place the potato slices on a baking tray lined with parchment paper. Add the olive oil, salt, and cracked pepper on top. Mix the potatoes around until they are all coated. I usually fold one side of the parchment paper over and swirl them around (that way I don't have to get my hands or a spoon oily). Lay them flat on the parchment paper without overlapping each other.

Bake the potato slices in the oven for about 15-20 minutes or until golden. Enjoy as a side dish or as a delicious snack with a dip!
