Easy banana chia seed pudding, with only 3 simple ingredients, is great for breakfast, dessert, or light snack!

BANANA CHIA PUDDING

overripe bananas

unsweetened coconut (beverage), almond or cashew milk

chia seeds

maple syrup

vanilla extract

toasted coconut flakes

banana slices

cacao nibs dark chocolate

In a medium bowl, add bananas and mash well, stir in non-dairy milk and chia seeds, mix well.

Let set for about 30 minutes, and give a good stir, repeat one more time, stirring again after 30 minutes. This step is an important step, as the seeds need to be stirred once or twice before completely gelling up and setting. If not stirred, the mixture will be soupy. Cover and place in the refrigerator for at least 6 hours, or overnight.

Serve with sliced bananas, toasted coconut flakes and cacao nibs/shaved chocolate. Would also be great with a dollop of coconut whipped cream!

I love chia pudding but I never tried with banana. Sounds delicious though. :)

Banana cream pie chia pudding

full-fat coconut milk

almond milk almond

tbsp agave (maple syrup works too)

tsp cinnamon

banana, mashed

banana, chopped (to top)

coconut flakes (to top)

Combine the chia seeds, coconut milk, almond milk, agave, cinnamon and mashed banana together in a bowl. Whisk until well combined.

Cover the bowl and place it in the fridge for 1 hour to firm up

Plate the chia puddings into 2 cups and topped with chopped bananas and coconut chips

Yummy.  You hit a soft spot here babe.  So delicious.  You really can't beat this combo. Will defo be making again!

I made this and it's so delicious! I used all coconut milk to use all the can at once. When calculated the calories, yikes! Next time I'll follow the recipe and use 50% almond milk, 50% coconut milk. A really big fan though, especially good iron content.

This recipe is incredible!!!! I live in a college dorm and make it by just guessing the amounts (I don’t have any measuring materials) and it turns out amazing every time. My friends always eat it when they come in my room!! Its delicious!

I made this for breakfast and it was so delicious. I left out the maple syrup and the mashed banana for fear it might brown overnight and just sweetened it with the banana topping. So good, but the spoonfuls without the banana  did need a little sweetness to curb the bitterness of the chia seed. Next time i will add in the maple syrup.

I’ve just stranded today my plant based healthy lifestyle and I loved this breakfast but as I’m trying to loose weight it is high in calories? Does it matter? Will I still loose the pounds??

Banana Cream Pie Chia Pudding

Healthy banana bread chia pudding made with banana, creamy coconut milk, and almond butter. This easy recipe will take you just a few minutes to make and is perfect for a quick grab and go breakfast or snack. Banana Bread Chia Seed Pudding

Add all of the ingredients, except the chia seeds, to a high powered blender and blend until smooth and creamy.

In a mixing bowl, combine the banana and milk mixture with the chia seeds. Whisk until well combined.

Pour the chia seed mixture into a storage container (I love using these jars) and place it in the refrigerator. After ten minutes, give it another stir to make sure everything is evenly combined.

Leave the chia pudding in the fridge overnight. In the morning give it a good stir and then top it with sliced bananas, your favorite granola, and even a little nut butter if that&#8217;s your thing. Enjoy!

This recipe is sooo tasty and only takes about 15 minutes to make the night before. Then in the morning you have a quick and easy breakfast meal that tastes delicious! I will definitely be making this recipe again and have already shared it with friends because I think everyone needs to try it!

Creamy and filling!  Overall a great and easy recipe.  I do recommend adjusting the amount of cinnamon and maple syrup to your individual taste.  I halved the maple syrup amount, and wish I had included less cinnamon than the amount listed.  It’s a powerful spice!

Made this last night with 1 can of full fat coconut milk plus two TBSP of water and subbed peanut butter because that’s what I had on hand. Soooo easy and delicious! My 2-year-old said “thank you for making this, mama” when I served it for breakfast. And that NEVER happens.

Banana Chia Pudding

Banana

milliliters (½ cup) Canned Coconut Milk

tbsp Chia Seeds

Mash

Add the mashed banana, coconut milk,and chia seeds to a small mixing bowl/jug and stir until well.

Stir

After around 5 mins give the pudding another good stir to make sure the chia seeds are not clumped together and are well dispersed.

Refrigerate

Transfer the mixture to serving dishes/ jars and refrigerate for at least 1 hour to allow the chia seeds to absorb the liquid and thicken.

I found the ratios a bit out- the chia needs to be really well swollen for lil ones. I doubled the coconut milk. Super yummy and easy!
