Banana curry might sound a little strange, but it's delicious. Thick banana slices are sauteed with coconut oil until extra sweet and caramelized. They're cooked with your favorite curry spices, cauliflower, sweet potato, and chickpeas for a healthy and filling vegetarian curry. 

BEST Banana Curry Recipe

Heat 1 tablespoon of the coconut oil over medium-high heat in a large, nonstick pan. Add the bananas, cut sides facing down. Cook for 2-3 minutes, or until they are well browned. Flip them over and cook for another 2-3 minutes. Remove them from the pan.

Add the remaining tablespoon of coconut oil, the onion, garlic, and ginger to the pan. Cook until the onion is translucent, about 3 minutes.

Transfer the onion mix to your blender. Add ½ cup of the cooked bananas, the coconut milk, curry powder, and salt and blend on high speed until smooth.

Pour the sauce into a large pot over medium-high heat. Add the cauliflower, sweet potato, and chickpeas and bring the curry to a boil. Reduce the heat and simmer, uncovered, until the vegetables are tender, about 15 minutes. Stir the remaining caramelized bananas into the sauce then serve with cilantro sprinkled on top.

Never in a million years would I have tried or expected these flavors to come together so so good!!!
Highly recommend this, I even added a little buttrrnut squash with the sweet potatoes, and spucy peanut sauce too.  Ir was phenomenal

Banana Thai Curry

To serve: rice

sugar snap peas

Tbsp oil (divided)

bananas

onion

ginger

Tbsp Thai red curry paste

coconut milk (414 mL)

vegetable broth (472 mL)

Tbsp soy sauce (15 mL)

Tbsp chili garlic sauce

red lentils

Prep: Prepare rice according to instructions on the package. Clean sugar snap peas and set aside.

Caramelize Bananas: Slice bananas into ½ inch thick rounds. Heat 1 Tbsp of oil in a large wok over medium/high heat and add the bananas. Cook until lightly browned, about 3 minutes on each side. Remove bananas and set aside.

Flavor Makers: To the same wok add remaining 1 Tbsp of oil, heating to medium. Add the onion, ginger, and curry paste, cooking until onion is soft, about 3 minutes.

The Rest: Add coconut milk broth, soy sauce, and chili garlic paste. Bring to a gentle simmer, then add lentils. Cook until lentils are soft, about 5 to 7 minutes.

Assemble: To serve, spoon rice into serving bowls, followed by curry. Top with sugar snaps and a few banana slices.

Banana Curry

Cook rice according to packet instructions.

Peel and slice the bananas about ½ cm thick.

Heat up the oil (or ghee or butter) in a pan, and add the cumin. Let it fry a little.

When the cumin has fried for a couple of minutes, add everything else to the pan and stir gently. That's the ginger, chili powder, cinnamon, water, turmeric. Do it gently so you don't mash the bananas too much.

Cook for about three minutes, then add the cream and salt. Give another stir and let it heat through. Done!

Plantain curry made in South Indian Style with onions, tomatoes, spices and herbs. Super flavorsome, delicious and easy to make. Serve with rice, roti or with rice-rasam or rice-sambar.

Banana Curry Recipe (Plantain Curry)

onions ((finely chopped or sliced, 1 large))

tomatoes ((deseeded, chopped & mashed or pureed))

ginger garlic paste

red chili powder ((adjust as needed))

garam masala (adjust

coriander powder ((optional, more if needed))

coriander leaves (chopped)

Wash &amp; peel banana. Make sure the inner skin has been removed completely. Dice them and add to a bowl of water.

If your bananas are young and tender, you may skip this step and add them directly to the pan later. Add to a steam basket. Place in your steamer or cooker or pot and steam till al dente (just cooked). It takes around 10 to 12 mins on a medium heat. Or Alternately you can also boil them in a open pot with 1½ cups water.  Do not make them mushy.

Prepare Plantain

Heat a pan with oil.  Add cumin and mustard seeds.

When they begin to sizzle, add hing, curry leaves, onions and green chilies. Saute until the onions turn completely golden.

Add ginger garlic paste and fry until the raw smell goes off.

Add tomatoes, salt and turmeric. Mix and saute until the tomatoes turn mushy.

Add red chili powder, garam masala and coriander powder. Mix and saute for 2 to 3 mins.

Pour half cup hot water (or plantain cooked water) to the pan and stir well. Cook until the mixture turns to a thick gravy like. You can add more water if you like a moist curry. I made this to a dry raw banana masala curry.

Taste test and adjust salt. Add the steamed plantain (or young chopped banana pieces). Stir well. 

Cover and cook for 3 to 4 mins on a very low flame until fork tender but not mushy. We prefer a dry curry, so I evaporate all the water by cooking for 2 to 3 mins more. Taste test and adjust salt and spices.

Add coriander leaves. Switch off. Serve plantain masala with rice-rasam or with roti.

I'm grateful that you shared this recipe, which looks very nice...but calling them raw is confusing. They are obviously cooked. They are green/unripe plantains, not raw. Most people around the world who use plantains would not call them "raw."

Green Banana Curry (Plantain Curry)

Banana Coconut Curry Shrimp

raw shrimp (peeled, deveined, tails removed)

red bell pepper (thinly sliced)

oz full-fat unsweetened coconut milk

red curry paste

bananas (sliced)

Heat a large, high-sided skillet (I used cast iron) over medium heat for about 2 minutes.

Toss the shrimp with salt, freshly ground black pepper, and 1 tablespoon of olive oil.

Add 2 tablespoons of olive oil to the hot skillet. Add shrimp without overcrowding (you might have to cook in 2 batches).

Cook shrimp, flipping it once or twice, on medium heat, about 3-4 minutes, until pink. Remove from heat.

Cook shrimp

Add thinly sliced bell pepper and 1 tablespoon of olive oil to the same, now empty, skillet, and cook it for about 4 minutes, occasionally stirring, on medium heat, until a little bit charred. Remove the cooked bell pepper to the plate.

Cook bell pepper

To the same, now empty, skillet, add coconut milk, red curry paste, fish sauce, honey, and lemon juice. Cook, constantly stirring, on medium heat, for about 5 minutes until all the ingredients blend and the coconut milk sauce has an even consistency.

Add fresh spinach and continue cooking, stirring, until it wilts completely.

Add sliced bananas and cooked sliced bell peppers. Stir to combine.

Make red curry coconut milk sauce

Return the cooked shrimp to the skillet with the red curry coconut milk sauce and reheat.

When serving, garnish with fresh lemon slices.

Very tasty curry that we could use for the bananas on the counter. Thank you Julia! My husband and I love it so much! We kind of cut a lemon wedge into tiny pieces and mixed it into the curry to pair it with steamed rice. Yummy!

I made this tonight. It was delicious…it however took me about 1.5 hrs (which incl.peeling shrimp) If I had prepared ahead of time it would have taken much less time  I did add some sliced mushrooms and they were a great addition.  Definitely worth the time and effort.  Rates it 6 *
