Peanut Butter Banana Oat Protein Cookies

bananas

old fashioned oats (or quick oats (check labels

vanilla protein powder (I like Orgain)

egg (lightly beaten)

cinnamon

kosher salt

vanilla extract

peanut butter (or nut butter,

sugar free chocolate chips (such as Lily's)

Preheat oven to 350 degrees F. Line 2 sheet pans with parchment or silicon baking mats. 

Move oven racks to the second from top and second from bottom slots.

In a medium bowl, mash the bananas. 

Add the oats, protein powder, egg, cinnamon, salt, vanilla, and peanut butter and chocolate chips and mix with a fork until combined.

Scoop ¼ cup of mixture and place on a baking sheet, flatten the top slightly with the back of the measuring cup.  Repeat with remaining mixture, adding 4 cookies to each sheet.

Bake for 16 to 20 minutes, rotating pans ½ through bake time to allow for even browning.

Allow to cool 5 minutes on the pan then transfer to a wire rack to cool completely.

Peanut Butter Oatmeal Protein Cookies

Sweet, simple, and packed with flavor, my Healthy Breakfast Cookies combine banana, peanut butter, and a little bit of chocolate, with wholesome oats.

Banana Breakfast Cookies

oats

peanut butter

over ripe mashed bananas

salt

chocolate chips (optional, + 2 tablespoons for topping)

cinnamon (optional)

vanilla (optional)

Preheat your oven to 350 degrees. Prepare a sheet pan with parchment paper, and set aside.

In a mixing bowl combine oats, mashed bananas, peanut butter, cinnamon, and salt. Mix together with rubber spatula and add ½ cup chocolate chips. Mix again.

Divide the dough into seven cookies and place them in the parchment paper pan. Press down on the cookies to make a cookie shape and about ½ inch thick. Top cookies with extra chocolate chips if desired.

Bake cookies for 8-10 minutes. Allow to cool before serving. Enjoy!

There is no better snack than these healthy oatmeal banana cookies! They’re full of nutrients but they’re still easy and quick to make.

Get a bowl and and mash the bananas until they’re mushy.

Add the cup of oats and any of the optional ingredients.

Stir

Put or grease

Put baking paper on the tray so the cookies don’t stick. If you don’t have that make sure to grease the baking tray with butter (or olive oil if you’re vegan).

Make

To make the cookie shape just grab a spoon and scoop a decent amount from the mixture onto the baking tray like I did in the photo above. It’s super quick and easy.

Bake

Off it goes into the oven for about 15 - 20 minutes.

Banana Oatmeal Cookies

bananas (overripe (about 1 ¼ cups mashed banana))

TBS honey ((or maple syrup))

tsp pure vanilla extract

½ cup quick cooking oats

¼ tsp fine sea salt

chocolate chips (or other add ins

Preheat oven to 350 degrees F. Line two baking sheets with parchment paper, set aside

In a large mixing bowl, mash the bananas.

Add honey, egg and vanilla and stir to combine.

Add oats, cinnamon and sea salt and stir until combined.

If desired, add mix-ins and stir until evenly distributed.

Use a 1 tablespoon measuring spoon or a 1 ½ TBS cookie scoop to measure portions of the dough, and place them on the prepared baking sheet spaced about 2” apart.

Bake in the preheated oven for 12-15 minutes, or until the tops are just set and the bottoms are very lightly browned.

Let cool on the baking sheet for 5 minutes before transferring to a wire cooling rack to cool completely.

Serve slightly warm or at room temperature.
