apple cider vinegar

tsp mustard seed

tsp celery seed

This is the BEST easy pickled banana peppers recipe! Sweet, salty and vinegary and only 5 ingredients so its super easy!

Easy Pickled Banana Peppers

white sugar

mustard seeds

celery seed

lb banana peppers

salt

Bring the vinegar, sugar, mustard seed and celery seed to a rolling boil.

Pour brine over peppers to within 1/2&quot; of the top.

Wipe off the rim and put lid and ring on.

Store in the fridge.

You can also follow proper canning procedures and then process them in a water bath canner if you prefer (will lend a slightly less crunchy pepper). Follow the USDA guidelines for timing.

Be sure to verify that the lids have completely sealed down if storing on the shelf.

Leave for 1 week or longer (if you can stand it!)

I use a little less sugar (in a futile attempt to make it diabetic friendly) and tried apple cider vinegar (made the peppers too soft). And you have found the perfect balance! This is one of my favorite grilled stuffed banana peppers recipes. I love that it's so easy and needs minimal cooking. And nevertheless, it's super delicious and can serve at any party or gathering.

Grilled stuffed banana peppers

small-medium banana peppers

onions

Maldive fish flakes

tsp Sri Lankan roasted curry powder

tsp salt

lime juice

tsp oil

Wash and put a long slit on each banana pepper. And remove the seeds. Highly recommend using gloves when you work with banana peppers. Also, if the banana peppers you're using are very fresh and break easily, then blanch them in hot water for a few seconds to soften them up.

In a bowl, mix onions, Maldive fish flakes, Sri Lankan roasted curry powder, salt, and lime juice. Mix well using your hands. gently crush the onions with your fingers as you're mixing. Make this mixture only when you're ready to stuff the peppers and grill. Do not let it sit on the counter.

Fill all the banana peppers with the mixture. it's easier to use hands for this. But make sure you wear gloves.

Heat 2 tsp of oil in a large pan. Lay all the banana peppers. Leave space between each banana pepper. Sprinkle some salt and pepper on the top. Let one side of the banana peppers brown and then flip and let the other side brown too.

Mediterranean Dense Bean Salad

Cup Extra Virgin Olive Oil

Lemon

Tsp Smoked Paprika

Tsp Dried Oregano

Tsp Cumin

Black Pepper (to taste)

15 oz Can Roman or Pinto Beans

15 oz Can Black Beans

Cups Rainbow Chard (see notes)

Large Banana Pepper (sliced)

Pint Cherry Tomatoes

Cup Chives (minced)

Cup Mozzarella Pearls (see notes)

Start by prepping your dressing. Whisk all dressing ingredients in a bowl until totally mixed. Taste, and adjust seasonings to your liking.

Drain and rinse your cans of beans. Gently pat the beans dry with a towel.

Prep your veggies - cut your tomatoes into quarters, chop your chard, cut your pepper into slices, and mince your chives.

To a bowl, add the beans with the cut veggies and mozzarella. Pour the dressing over, and mix well.

For best results, let the salad sit for about 30 minutes, to let the flavors meld.

Serve at room temperature, and enjoy!

For my preference, the suggested amount of oil is way too much! I made the dressing and poured in a little over half of it before stopping and tasting it, and it was still toeing the line for me for oiliness. Other than that, I loved it! Definitely will be making it again!
