Baked Bang Bang Chicken is a crispy chicken Chinese restaurant favorite served in a delicious spicy homemade sauce, ready in 30 minutes.

mayonnaise

Mix the mayonnaise, Sriracha, sugar and vinegar in a small bowl and set aside.

Whisk the eggs, salt and pepper in a shallow bowl.

Cut the chicken breasts into 1” chunks.

Place the flour into a shallow bowl.

Mix the breadcrumbs, onion powder and garlic powder together in a shallow bowl.

Preheat the oven to 375 degrees.

Coat the chicken with the flour, then dredge in the egg mixture, then into the panko mixture and add to a large baking sheet.

Spray with vegetable oil spray for 2 seconds.

Bake for 22-25 minutes or until golden brown.

While still hot, toss with the sriracha mayonnaise mixture.

Bang Bang Chicken

sweet chili sauce (I used Frank's)

To prepare the sauce, mix all the ingredients for the sauce together in a bowl and refrigerate until ready for serving.

In a medium bowl, mix flour, cornstarch, garlic powder, smoked paprika, salt and pepper. To the bowl add the hot sauce, egg, buttermilk and whisk until you have a smooth batter. Add the chicken pieces to the bowl, toss to make sure each piece is coated in the batter and set aside.

In another bowl add about a cup of Panko breadcrumbs.

Add about 1/2 inch of oil in a large skillet and heat the oil over medium-high heat.

Coat each piece of chicken with breadcrumbs, add more breadcrumbs as needed, and fry on both sides for about 3 minutes or until chicken is cooked through. Place on paper napkins to soak up some of the oil. Repeat with all chicken pieces. Do not overcrowd the chicken, only add a few pieces of chicken to the skillet at a time, so the chicken turns out crispy.

Drizzle chicken with sauce and serve.

Bang Bang Sauce (Bonefish Grill Copycat)

(120 g) mayonnaise

This Bang Bang Chicken recipe is for the authentic Sichuan version of the dish, rather than the Americanized fried version, tossed in a spicy, tangy sauce.

Bang Bang Chicken: The Authentic Sichuan Version

First, poach the chicken. In a small pot, add 2 cups water, 3 slices ginger and 1 scallion. Bring it to a boil, then add in the chicken breast. Once the water boils again, put the lid on and turn the heat to the lowest setting. Cook for 10-12 minutes. The chicken breast is done if the juice comes out clear when you poke the middle with a chopstick. Transfer the chicken breast to an ice bath to stop the cooking process and keep the chicken moist. Don’t discard the cooking water, as we’ll be using it later in the recipe.

Second, assemble the plate. Julienne the cucumber and spread it in an even layer on a shallow plate. Now, hammer the chicken with a rolling pin to flatten the meat and break it up into shreds. Layer the chicken on top of the cucumber.

Third, prepare the sauce. Mix together the following: ½ cup chicken stock (i.e., the cooking water from the chicken), 2 tablespoons light soy sauce, 4 teaspoons Chinese black vinegar, 2 tablespoons sugar, 1½ tablespoons sesame oil, 1 tablespoon chili oil (or to taste), 2 tablespoons toasted sesame seeds, 1 teaspoon ground Sichuan peppercorn, ½ teaspoon salt, and 2 tablespoons finely chopped scallions.

Finally, pour the sauce over the chicken and cucumber, and serve. Toss the chicken and cucumber to coat with the sauce just before you’re ready to dig in!

This Bang Bang Chicken may be completely different from the authentic Chinese dish, but I guarantee you'll fall in love with it after just one bite. 

Bang Bang Chicken (Easy Dinner Recipe)

gochujang (Korean hot pepper paste)

Whisk together milk and egg in a large bowl. Add the chicken and let it marinate for 15 minutes. Drain.

Place potato starch, flour, salt, pepper, and shichimi togarashi in a large, resealable bag. Then seal and shake the bag until well-combined. Next, place the chicken cubes in the bag, seal it, and shake until completely coated.

Heat oil in a large skillet to 325 degrees Fahrenheit. Carefully drop the chicken into the hot oil, about 5-8 pieces at a time. Fry for 90 seconds and transfer onto a plate lined with paper towels.

Increase the oil’s temperature to 350 degrees Fahrenheit. Re-fry the chicken, 5-8 pieces at a time, for another 90 seconds. Transfer onto a plate lined with paper towels.

Whisk together mayonnaise, honey, sweet chili sauce, and gochujang in a large bowl. Add the chicken and toss to coat. Serve and enjoy!

In a medium bowl, whisk together your mayonnaise, honey, sweet chili sauce, sriracha, and sesame seeds. Set aside.

Prepare your chicken by cutting it all into 1 inch cubes.

In a medium bowl, whisk together your milk and egg. In a separate bowl, whisk together your cornstarch, flour, salt, and pepper.

Place all your cubed chicken into the bowl of milk and egg, stir to coat completely. While the chicken is soaking in the milk mixture for a minute, heat your frying oil in a large skillet over medium high heat.

Remove the chicken from the milk and egg mixture, allowing any excess liquid to drip off.

Pour your flour mixture into a large plastic bag, place all your soaked chicken into the bag, seal it up and shake the bag to coat the chicken completely with the flour mixture.

You may need to cook the chicken in a couple batches, remove the chicken from the bag and carefully place them into the hot oil.

Fry the chicken for about 3-4 minutes, rotating throughout to evenly cook. The chicken should be golden brown and cooked through.

Remove from the oil and place on a paper towel lined plate to allow excess oil to drip off.

Once all the chicken is done, transfer it all into your bowl with the sauce and stir to coat each piece evenly.

Heat the 2 tbsp of vegetable oil in a large skillet. Season chicken pieces and shrimp generously with salt and pepper. Sprinkle the cornstarch over chicken and shrimp and toss, making sure each piece is fully coated in cornstarch. Add the coated chicken to the skillet and cook for a couple minutes per side, until slightly golden. Remove from skillet and add shrimp. Cook shrimp for a couple minutes until slightly pink and remove from skillet. Set aside.

Chicken and Shrimp

To make the peanut sauce add all ingredients in a small sauce pan and heat just until the mixture begins to bubble; cover and remove pan from heat.

Peanut Sauce

In a medium sauce pan heat the olive oil, sesame oil and crushed red pepper flakes over medium heat. Add chopped onion, garlic and ginger and cook just until onion is translucent. Add spices and water and stir well. Bring to a boil, then add coconut milk and bring the mixture back up to a boil. Reduce heat and simmer for about 20 minutes or until sauce thickens. Add julienned carrots and zucchini, then peas. Cook for another 10 minutes or until carrots are tender.

Coconut Curry

Divide the rice into 4 plates. Add chicken and shrimp, dividing them equal among the 4 plates. Spoon the coconut curry over chicken and shrimp. Drizzle peanut sauce over the dice. Top with crushed peanuts, sesame seeds if desired, green onions and some of the flaked coconut.

Make bang bang sauce.

In a small bowl, combine the mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Mix well and set aside.

In a bowl, mix together the batter.

In a medium mixing bowl add buttermilk, flour, cornstarch, egg, sriracha, garlic powder, salt, pepper, and cayenne pepper. Whisk to combine. Add chicken tenders and toss to coat.

Add panko to a shallow plate.

Remove chicken from the batter and dredge in the panko.

Working one piece at a time, remove the chicken from the batter, gently shaking off any excess batter. Dredge the chicken in the panko, pressing slightly to adhere. Set on a clean plate. Repeat with the remaining chicken pieces. Set aside while you heat the oil.

Heat oil.

To a large skillet, add about an inch of oil. Heat oil over medium-high heat until it reaches a temperature of 365°F.

Fry coated chicken.

Working in batches, being careful not to overcrowd the pan, add chicken and cook until browned (about 2-3 minutes on each side), or until the chicken reaches an internal temperature of 165°F. Repeat with the remaining chicken tenderloins, making sure the oil is 365°F before adding more chicken.

Transfer the chicken to a paper towel-lined plate.

Drizzle with sauce, top with parsley, and serve warm.

Quick & Easy Bang Bang Chicken

lb chicken thighs (skinless boneless)

buttermilk (or substitute with 1 cup dairy milk with 1 tbsp lemon juice)

cornstarch (or potato starch)

vegetable oil (or any neutral oil)

tsp black pepper

green onion (finely chopped for garnish)

Japanese Mayo (or sub with normal mayo)

sweet Thai chili sauce

tbsp sriracha sauce

​First dice chicken thighs into 1.5-inch-wide bite-size pieces. Then transfer chicken pieces into a large bowl.

To your large bowl of diced chicken, add buttermilk. Let chicken tenderize in buttermilk for 10-12 minutes.

Meanwhile in a small bowl, combine Sauce ingredients. Set aside.

In a medium bowl, combine cornstarch, salt, garlic powder and black pepper.

Dredge each piece of chicken into the cornstarch mixture until coated. Shake off any excess. Transfer coated chicken to a baking sheet lined with parchment paper.

In a large skillet (10-inch) on medium heat, add vegetable oil or any neutral cooking oil. Once oil is hot, fry coated chicken in 2-3 batches until golden and crispy on both sides, about 3-4 minutes per side.  Do not overcrowd or overcook.  For chicken to be safely consumed, it should reach an internal temperature of 165 F with a digital thermometer. To Air Fry Chicken: please see Notes below for instructions.

Transfer deep-fried chicken to a wire rack or a paper towel-lined plate to remove excess oil.

Transfer crispy chicken to a large bowl. Pour sauce over top. Toss to mix.

Garnish with green onions. Enjoy while hot and crispy!
