There&#039;s nothing like a nice juicy sausage to go with eggs. Cooked to golden brown while keeping the meat nice and juicy. Who can resist it. The fat drips away while cooking, making the sausages that little bit healthier.

Sausages

2-3 Thick Sausages (any type)

Preheat the air fryer to 180 ° C or 360 ° F which usually takes around 3 minutes

Prick holes into the sausages before placing them in the air fryer.

Preparation

Place the sausages into the air fryer and cook for 12-15 minutes.

medium sticks celery, finely chopped

yellow pepper, chopped

red pepper, chopped

chorizo sausages (about 400 grams)

pork sausages (about 400 grams)

garlic cloves, chopped

½ tsp sweet smoked paprika

½ tsp ground cumin

thyme

milliliters white wine

cherry tomatoes or chopped tomatoes

chicken stock cube

chives, snipped (optional)

Heat 2 tbsp olive or rapeseed oil in a <a href="https://www.bbcgoodfood.com/review/test-best-casserole-dishes">large heavy-based pan</a>.

Add 1 finely chopped onion and cook gently for 5 minutes.

Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.

Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.

Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 – 2 mins or until the aromas are released.

Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.

Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.

Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.

Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.

2large orange sweet potatoes

Preheat the oven to 200C/gas 6/fan 180C. Cut the sweet potatoes into wedges and put them in a large roasting tin. Drizzle over 2 tablespoons of the oil and toss the wedges to coat. Roast for 40-45 minutes until cooked through and crisp.

Halfway through the cooking time, heat the remaining oil in a frying pan. Add the sausages and cook for 20 minutes, turning regularly until cooked through.

Drain off any fat and add the onion marmalade, with about 100ml/31⁄2fl oz water. Stir well then heat through.

Sprinkle the chips with a little salt and serve with the sausages and gravy.

Heat oven to 200C/180C fan/gas 6 and line a baking tray with foil. Mix honey and both of the mustards in a bowl. You can make the glaze 2-3 days ahead.

Add the sausages and toss well to coat them. Arrange the sausages, spaced apart, on the baking tray. Smooth any remaining glaze left in the bowl on top of the sausages to make them extra sticky. Bake for 20 mins until golden.

Toss sausages in oil in a roasting tin and roast at 200C/180C fan/ gas 6 for 20 mins until browned.

Mix soy sauce, honey and mustard together. Drain the fat from the sausages and pour over most of the soy mix, coating thoroughly. Return to the oven for 10 mins until sticky. Serve in baguettes with salad leaves and the remaining soy mix.
