I boiled my potatoes until they were just tender then grilled. No, not because I cannot wait 15 minutes but because the kabobs I was making with them cooked faster that that. These were very good!

Really good...I'm a vegetarian & only have a George Foreman grill. They took a lot longer than 15 minutes to cook since the heat isn't as high as a regular grill. I may try them in my air fryer next time. Still, they were delicious!

Easy Corn Pudding Casserole

Serve these delicious little pork balls as a light cocktail snack. Perfect with dipping sauce.

Soy and sesame pork balls

(1/4 cup) sesame seeds

pork mince

egg, lightly whisked

tbsp oyster sauce

tbsp kecap manis

(1/4 cup) rice flour

loosely packed finely chopped fresh Thai basil

green shallots, ends trimmed, finely chopped

garlic cloves, crushed

Peanut oil, to shallow-fry

We're combining Chicken, Pork BBQ, and some of our favorite vegetables, to make this stew from scratch. Brunswick Stew is a traditional side dish served in barbecue restaurants throughout the South, but it's great as a main course of its very own. Just add saltine crackers or bread.

Brunswick Stew

Chicken

lb. Pork Barbecue, fully cooked.

lb. Baby Lima Beans

lb. Corn

Potatoes,

Tomato Sauce – 8 ounces.

Tomato Paste –

Butter

Apple Cider Vinegar

Texas Pete Hot Sauce

Ketchup

Tablespoons Brown Sugar

Worcestershire Sauce

Black Pepper

Salt

Rinse the fryer under cold running water.

Place fryer in large stock pot and cover with water about 6 inches over chicken.

Bring to a boil, reduce heat to medium and let chicken cook for one hour.

Remove cooked chicken from pot, set aside to cool.

Place the frozen baby lima beans and frozen corn in a colander.  Rinse well.

Add the beans and corn to a large stock pot.

Wash, peel and cut up the potatoes, add to the beans and corn.

Add enough water to cover the vegetables by about 2 inches.

Cook over medium heat, stirring often, until vegetables are tender.  About one hour.

While the vegetables cook, pull the chicken meat from the bones.  Discard bones and skin.

When vegetables are done, remove any excess liquid, leaving just enough to reach top of vegetables.

Return to stove top and simmer on medium, stirring often, until warm, prior to serving.

Stock or liquid from vegetables may be added if needed to obtain desired consistency.

When researching a recipe I chose this one because it looked the most like Smithfields and we love it!

Just like Parker's in Wilson. Well, actually better since it's homemade. Good stuff! Good recipe. Make it, eat it, you will love it! From a guy in Florida who often travels to NJ. For some reason I can drive to NC in one day but it takes me 3 days to finally hit VA. Always a detour for good NC cookin'. BTW, your oven cooked BBQ recipe is the best too (aside from real home smoked).

Steve, this Brunswick stew was mighty tasty. I live in Maryland and don't have access to fine Carolina BBQ. But I do have a friend from Raleigh who always brings me a bottle or two of Carolina Treat. A cup of that and the sauce had more of a tangy flavor that my family really liked. Thanks for such an awesome recipe.

I made this about a month ago and my family and I LOVED it!  The only change that I made, was instead of using apple cider vinegar, I used some Eastern NC vinegar based bbq sauce, because I didn't have any apple cider  vinegar.  My family is from that area, so it really brought me back.  I am actually making it again today.  This is my go to recipe for Brunswick Stew.  Thank you so much!

I love Brunswick stew! This recipe was a huge hit at our house. The only thing I did was smoke all my meat myself at home. I plan on doing a BBQ when it warms up and will most definitely have this as a side.(cooking your way) Thank you for sharing

A simple homemade coleslaw of traditional carrots, onion, celery and both white and red cabbage with light mustard-lemon mayonnaise

Tangy cabbage slaw

mayonnaise

tbsp cider vinegar

tbsp wholegrain mustard

tsp celery salt

¼ head white cabbage, very thinly sliced

head red cabbage, very thinly sliced

carrots, julienned

red onion, diced

celery,

Whisk together mayonnaise, lemon zest and juice, vinegar, mustard and celery salt in a small bowl, then season generously.

Add cabbage, carrots, onion and celery. Mix well and refrigerate. Can be made up to 1 day ahead.
