This easy basil vinaigrette is great as a salad dressing or sauce for chicken, fish, vegetables, or pasta. It is great to have on hand!

Basil Vinaigrette

basil leaves

garlic (minced)

shallot

lemon juice

white balsamic vinegar or red wine vinegar

salt

olive oil

black pepper (to taste)

Place the basil, garlic, shallot, lemon juice, vinegar, salt, olive oil, and pepper in a blender or food processor. Blend until smooth. Taste and season with additional salt and pepper, if necessary. Serve!

Note-vinaigrette will keep in a jar or container in the fridge for up to 5 days.

Sweet Basil Vinaigrette

basil

rice vinegar

sugar

honey

garlic

Dijon mustard

black pepper

water

neutral-flavored oil (sunflower, grapeseed, avocado, canola oils all work well)

Place basil leaves in a strainer and rinse well with cold water. Drain well.

Combine all ingredinets except the oil in a food processor or blender. Puree mixture until smooth and bright green.

With the motor running, slowly add the salad oil to form an emulsion. (See Café Tips above in the post for tricks on how to do this.)

Store in an airtight jar or container in the refrigerator. Dressing keeps for 5-7 days in the refrigerator.

After a bit of an indulgent weekend, I think we can all agree that an epic loaded power salad with tons of fresh produce is the best way to start the week!

Power Salad

market lettuce (any variety will work)

chickpeas (drained)

red pepper bell (medium dice)

yellow bell pepper (, medium dice)

cherry tomatoes (halved)

cucumber

onions

feta cheese

avocado (sliced)

Arrange the greens on on a large serving bowl. Arrange the other ingredients in groups on top of the greens.

Serve with the Basil Vinaigrette served on the side

Summer Grilled Peach Salad with Basil Vinaigrette

red onion

cherry tomatoes, sliced lengthwise

avocado,

goat cheese (Can substitute with feta cheese

pistachios,

olive oil oil

apple cider vinegar

raw honey (Adjust according to taste.)

Dijon mustard (Adjust according to taste.)

Toss the sliced peaches with olive oil in a bowl until they are lightly coated.

Preheat the grill to medium-high heat (375–425°F). Grill the peaches for 2–3 minutes per side until they are soft and have grill marks. Set aside to cool slightly.

In a jar or glass, combine olive oil, apple cider vinegar, honey, Dijon mustard, salt, and chopped basil. Shake or whisk until well blended.

Preparation

Place the leafy greens in a large serving bowl and toss with half of the vinaigrette.
