Instant Pot BBQ Chicken

Season

Combine the chili powder, cumin, smoked paprika, onion powder, garlic powder, salt, and pepper in a small dish. Rub 1 tablespoon of olive oil and the spice mixture on the chicken breasts, fully coating them.

Brown

Add the remaining olive oil to the Instant Pot. Press the Sauté button. Once the oil is heated, brown the chicken breasts, two at a time, on each side for 2 minutes.

Press the Cancel button. Add in the broth and 1/2 cup BBQ sauce and stir. Add in the chicken breasts.

Cook

Press the Manual button and set the timer for 10 minutes. Allow pressure to release naturally for 10 minutes.

Brush

Remove the chicken breasts from the Instant Pot. Brush with remaining BBQ sauce until coated to your liking.

Air Fryer BBQ Chicken Breast Recipe

½ chicken breasts (thin)

½ teaspoon smoked paprika

olive oil

BBQ sauce (plus more for serving)

Preheat

Pound

For best results, use thin chicken breasts. If needed, slice the chicken breasts in half to create thinner pieces or place the breasts between parchment paper, plastic wrap, or in a zip-top bag and pound them thin.

Combine

Combine the chili powder, smoked paprika, salt, onion powder, and garlic powder in a small dish.

Coat

Coat each chicken breast with the oil and seasoning mix.

Place

Place the chicken breasts in the air fryer basket in a single layer. If needed, cook the chicken in batches.

Cook for 9 minutes, flip the chicken breasts, and cook for 8 more minutes.

Brush each chicken breast with BBQ sauce.

Serve

Cook for another 2 minutes until the internal temperature reaches 165°F. Slice and serve with additional BBQ sauce.

Air Fryer BBQ Chicken Breast

Full of fresh flavors, these Baja Bowls are protein-packed for a satisfying meal - and they taste amazing!

Baja Bowls

chicken breast

lime juice (juice of about 2 limes)

orange juice (juice of about 1 orange)

jalapeños (sliced)

garlic (minced)

oregano

cooking oil (divided)

greek yogurt

salsa verde

cilantro ((about ½ bunch))

lime juice ((juice of about 1 lime))

garlic

cilantro lime rice (prepared)

black bean and corn salsa (prepared)

grape tomatoes (halved)

avocado (sliced)

feta cheese

Preheat the oven to 350˚F.

Place the chicken breast in a zip top bag, or covered container.  Add the lime juice, orange juice, jalapeno slices, garlic, oregano, cumin, salt, pepper, and half of the cooking oil.

Mix well until the chicken is evenly coated in the marinade.  Let marinate in the refrigerator for at least 20 minutes, or up to 3 hours.

Heat the remaining oil in a large oven-safe skillet over medium high heat. Once hot, add the chicken breast to the skillet and let sit on the first side 2-3 minutes without moving to sear.  Once a nice golden brown sear has formed, flip the chicken and cook an additional 2-3 minutes.

Transfer the skillet to the oven and cook for an additional 10-15 minutes or until chicken reaches 165˚F internal temperature. Note: if you don&#39;t have an oven-proof skillet, you can transfer the chicken to a baking sheet or casserole dish, but it may take a couple of extra minutes to cook.

Let sit 5 minutes, then slice.

To make the Baja Chicken

Place all sauce ingredients in a blender or food processor and blend until smooth.

To make the Creamy Cilantro Sauce

Place one cup of rice in the base of each bowl, and set the sliced Baja chicken on top of the rice.

Layer on the black bean and corn salsa, tomatoes, and avocado.

Drizzle the creamy cilantro sauce over the top of the bowl. Sprinkle feta and serve.

To assemble the bowls

BBQ Chicken Marinade is the perfect mixture of tangy barbecue sauce mixed with zesty Italian dressing. Your chicken will be so tender you won&#039;t even need a knife to cut it. This chicken is perfect grilled and served with corn on the cob.

lbs chicken breast (boneless, skinless)

BBQ Sauce

Italian Dressing

tbsp apple cider vinegar

garlic (pressed)

To make marinade, whisk together the BBQ sauce, Italian dressing, apple cider vinegar, and pressed garlic.

Poke chicken all over with a fork. Place the chicken in a dish or zip top bag and pour the marinade over the chicken to cover completely. Refrigerate for up to 4 hours, with a minimum of 30 minutes.

Heat the grill to medium heat and brush with oil to prevent sticking. Place chicken on the grill and cook for 4-6 minutes per side, depending on thickness. Cook to an internal temperature of 165˚F.

Once done, remove chicken from grill and allow to rest for 5 minutes. Then serve warm. Enjoy!

Preheat the oven to 400˚F.

Season each side of the chicken with the mesquite seasoning and lay flat in a large baking dish.

Drizzle BBQ sauce over the top of each chicken breast and sprinkle with diced onion.

Bake uncovered for 20 minutes, then remove the dish, add cheese and bacon to the top and return to oven for 5-10 minute or until the cheese is melted and the chicken is done (internal temperature of 165˚F.)
