In a large skillet over medium heat, add the ground beef. Cook until very little pink remains, breaking up any clumps with the back of a fork, about 10 minutes. Sprinkle with the salt and pepper. Drain off the fat, if desired.

Stir in the pureed tomatoes, taco seasoning, and cayenne (if your taco seasoning is salt-free, you will want to add more salt). Cook until heated through and the beef is fully cooked, another 3 to 5 minutes. Taste and adjust seasonings as desired.

Preheat the oven to 350F and spray a 9x13 casserole dish with coconut or avocado oil spray.

Place one and a half pizza crusts on the bottom of the pan, cutting to fit. Use the cut bits to fill in any gaps. It does not need to be perfect.

Top with 1/3 of the beef/tomato mixture and sprinkle with 1/4 of the cheese. Repeat this layering 2 more times, but use all of the remaining cheese for the top layer.

Bake 30 minutes, then turn on the broiler for 1 to 3 minutes to brown the top slighlty (watch carefully!). Remove and let cool 10 minutes before serving.

soft corn tortillas, (street taco size/individual taco size.)

can black beans, (drained and rinsed)

petite diced tomatoes, (undrained)

cheese, ((I recommend the Mexican blend))

black pepper

parsley, (dried)

salsa

tomato sauce

Preheat

Preheat the oven to 350F. Cook ground beef until brown and no longer pink.

Spread

Spread half of the enchilada sauce in the bottom of the dish.&nbsp;

Cook

Cook the corn in microwave according to package directions.

Spread half of refried beans on 6 corn tortillas. Place tortillas, bean-side up, over sauce in dish, overlapping to fit. 

Stir

Stir together remaining enchilada sauce, corn, black beans, spices, salt, ground beef, and undrained tomatoes in a large bowl. 

Spread half of beef enchilada mixture over the corn tortillas that are layered in the dish. Then layer with 1 cup of cheese.

Layer

Repeat layering – take 6 more corn tortillas and spread with the rest of the refried beans and place as another layer in your 13X9 baking dish. Then layer with the enchilada mixture and remaining shredded cheese.

Bake

Bake uncovered for 35 minutes or until hot. The center should be hot and the casserole should be bubbly around edges. Let stand 5 minutes before cutting into 8-12 pieces.

Top off your dish with your favorite enchilada toppings – shredded lettuce, sour cream, avocado, etc.

Beef Enchilada Casserole Directions

Saute

Heat oil in a large saucepan over medium heat. Add the garlic and sauté for 1 to 2 min. 

Add the oregano, chili powder, basil, ground black pepper, salt, cumin, parsley, salsa and tomato sauce. Mix together and then stir in the water. 

Boill

Bring to a boil, reduce heat to a low simmer for 15 to 20 min.

Preheat oven to 350º F.

Drizzle olive oil into bottom of 12-inch skillet over medium heat. Once warm, add a tortilla, one at a time, to the skillet. Cook until crisp on each side, remove from the skillet with tongs and set aside.

Add beef and onions to the skillet and cook until completely browned. Remove from heat and drain away any drippings. Add garlic to the skillet and cook until fragrant.

Spoon about 1/2 cup of enchilada sauce into the bottom of a 9x13 casserole dish that has been sprayed with olive oil or cooking spray. Spread enchilada sauce to coat the bottom of the casserole dish.

Place 3 tortillas on top of the enchilada sauce, overlapping them slightly at the edges to make all 3 tortillas fit lengthwise. Ladle on additional enchilada sauce, about 1/2 cup. Layer on beef, onion and garlic mixture, making sure to spread mixture evenly over tortillas and enchilada sauce.

Top with large dollops of sour cream and spread slightly. Sprinkle on a little of both cheeses.

Repeat layering with 3 more tortillas, enchilada sauce, beef mixture, sour cream, and end with cheeses.

Bake in oven until cheeses have melted, about 20 minutes.

Serve warm.

Heat a large skillet over medium-high heat and add the ground beef, taco seasoning and salt. Cook, stirring and breaking up the beef, until the beef is browned and cooked through. Drain any fat, if needed.

Add the enchilada sauce, water and salsa and bring to a boil. Cook for 4-5 minutes, until slightly reduced. Remove from the heat.

Stack the tortillas and cut into 1-inch strips. Arrange half of the tortilla strips in the bottom of a 9-inch deep dish pie dish. Add half of the beef mixture, then sprinkle half of the cheese over the top. Sprinkle 2 tablespoons of the chopped cilantro on top. Repeat the layers, using the remaining tortillas, beef and then cheese.

Bake until the cheese is melted and bubbly, about 10 minutes. Sprinkle the remaining cilantro over the top before serving. Serve with sour cream and lime wedges.

Use to buy a kit like this. But never again. My hubby liked this so much he went back for 2nds. Have to make bigger one next time. He wanted 3rds when we had leftovers.😆

Made this for the 2 of us-cut recipe in little more than half-added some mashed bl.beans to layers. Sprinkled cumin over meat when saute.Extra water and used 4 white tortillas. Topped with s.cream&amp; prepared avocado and cilantro.Yumm

at 82, i have rolled, tucked, layered,
stacked...but finally, i followed your recipe and cut, layered placed in my 10"pyrex deep dish and in 110 out weather, 81 degrees in, i fired up my gas oven and baked this in a few more minutes than you..ovens vary...but all done in such a short time...my old body couldn't be more thrilled with this dish!!..it is wonderful in all aspects...start to finish!! thank you so much...out with the old (preparations, not me), and on with the new!

Delicious! Instead of taco seasoning I use chili, cumin, garlic, and sea salt. Doubled the recipe and added black beans. My 13 year old son was so intrigued by the delicious smell he actually came upstairs from his game console to help me put everything in the casserole dish!!

I made this tonight.  My husband loved it.  He's usually not wild about casseroles.  I did use a small shallot and sautéd that once the meat was no longer pink.  I used a 15 oz. can of Hatch organic red enchilada sauce; thus used only 1/4 cup of water.

This easy Beef Enchilada Casserole requires just 4 simple ingredients and about 15 minutes of prep!

Easy Beef Enchilada Casserole

shredded Mexican-blend cheese, divided

Preheat oven to 350°F. Spray a 2-quart baking dish with nonstick spray.

Spread ¼ cup of enchilada sauce in a thin layer in the bottom of the baking dish. Set aside.

In a large skillet, cook beef until no longer pink. Drain off the excess fat, return the beef to the skillet, and stir in ¾ of the enchilada sauce and ½ cup of the cheese.

Arrange 4 of the tortillas in the bottom of the prepared dish, tearing or overlapping them as necessary to cover the bottom.

Top with half of the meat mixture and drizzle with ¼ cup of enchilada sauce. Repeat layers one more time.

Cover with foil and bake for 30 minutes.

Uncover, sprinkle with remaining ½ cup of cheese, and bake for an additional 5-10 minutes (until cheese melts and the casserole is hot and bubbly).

Garnish with optional toppings, if desired, and serve!

Heat a large skillet or pot over medium high heat.

Make the Beef Enchilada Mixture

Once hot, add the avocado oil and then add the ground beef. Cook the ground beef until no longer pink, breaking it up as it browns. Once the ground beef has browned, add the diced yellow onion and sauté until the onion starts to become translucent. Next, add the minced garlic, lime juice, salt, pepper, dried herbs, and spices. Cook for another 1-2 minutes and then remove from the heat.

Add the ground beef mixture, green chilies, black beans, diced tomatoes, lime juice, and enchilada sauce to a large mixing bowl and stir until well combined.

Next add the tortilla quarters and gently stir until well combined.

Transfer the enchilada mixture to the same skillet you used to cook the ground beef mixture. Spread the mixture into an even layer with the back of a spoon and top with shredded cheese.

Bake uncovered for 12-15 minutes or until bubbly and the cheese is golden and melty.

Remove from the oven and let cool for 10 minutes. Top with chopped cilantro, red onion, lime wedges, and sour cream before serving.

ground meat (beef, turkey, bison, venison)

beef bouillon cubes (or 2-3 teaspoons bouillon powder)

onion (diced)

bell pepper (diced)

oz red enchilada sauce

oz black beans (drained)

corn (drained)

shredded cheese (divided)

crushed tortilla chips ((4 cups uncrushed), divided)

In a Dutch oven (stove to oven-safe pot) over medium-high heat, brown ground meat with 2 bouillon cubes, ground cumin, chili powder, garlic powder, and salt.

Once the meat is browned, add in the diced onion and bell pepper. Sauté until veggies are translucent.

Stir in the can of red enchilada sauce, drained can of black beans, drained can of corn, 1 cup shredded cheddar cheese, and 1 cup crushed tortilla chips.

Once the mixture is combined, top casserole with 1 cup shredded cheese and then 1 cup of tortilla chips.

Bake in the oven safe pot at 400F for 20 minutes or until the cheese is melted and the sides are bubbling. Let the casserole cool for 15 minutes before serving.

Store leftovers in an airtight container in the fridge for up to 3 days.

1.0 oz packets taco seasoning

10 oz cans red enchilada sauce

corn tortillas

14 oz cans refried beans

colby jack or sharp cheddar cheese

shredded pepper jack cheese

Drizzle a large skillet with olive oil. Cook the ground beef and onion over medium-high heat. Cook for 8-10 minutes or until no pink remains and the onions have softened. Add garlic, cook for one minute longer. Drain excess grease from the pan.

To the beef add taco seasoning, taco sauce and green chiles. Stir to combine then simmer for 5 minutes over medium heat. Remove from the stovetop.

Preheat oven to 375°F. Spray a 13x9-inch deep baking dish or cake pan with cooking spray.

Toss together colby jack cheese and pepper jack cheese. (Divide into thirds)

Assemble: Spread 3 Tablespoons from one can of enchilada sauce on the bottom of the baking dish. (Reserve one whole can red enchilada sauce for the top.) Arrange 6 tortillas on the bottom of the dish. Cover with 1/2 of the remaining red enchilada sauce. Spread with 1 can refried beans. Arrange 1/2 taco meat over beans then sprinkle with 1/3 of the shredded cheese mixture.

Repeat layers: 6 tortillas, spread with remaining enchilada sauce, 1 can refried beans and reserved taco meat. Sprinkle with 1/3 shredded cheese.

Layer with remaining 6 tortillas. Pour 1 whole can of enchilada sauce from end to end and spread over the tortillas to cover. Sprinkle with the final 1/3 of shredded cheese blend.

Spray a piece of aluminum foil with cooking spray. Cover dish.

Bake for 25 minutes, then remove the foil. Continue to bake for another 15 minutes or until the cheese is bubbly and golden brown.

Let stand 5 minutes then cut into squares and serve topped with sour cream, diced tomatoes, onion, fresh cilantro, shredded lettuce, black olives or any of you favorite taco toppings.
