In this beet juice, the beets taste sweet and earthy, lemon and ginger add zing, and the cucumber adds mineral-rich water. Beets are naturally sweet so we don&#8217;t add any additional fruit, with the exception of a lemon. If you find the juice too tart, consider pushing a couple carrots or an apple through the juicer. If you&#8217;re sensitive to ginger&#8217;s warming/spicy quality, add a smaller amount at first and go from there.

Skillet Mexican Street Corn is loaded with flavor! Sweet summer corn (fresh or frozen) is toasted/charred  it in a skillet and topped with a bit of mayo, green onion, jalapeno (optional) cilantro, crumbled cotija cheese and chili powder. Serve as a side dish, a dip  or top chicken, fish, shrimp, or tacos.

Skillet Mexican Street Corn

vegetable oil

mayonnaise

jalapeno pepper (seeded and stemmed, finely chopped (optional))

cilantro leaves (finely chopped)

juice of one medium lime

cotija cheese (or queso fresco,

tsp chili powder (more or less to taste)

salt (to taste)

Heat oil in a large skillet over medium high heat. Add corn and cook without stirring until corn begins to char (about 2-3 minutes). Toss corn and let cook for an additional 2-3 minutes (without stirring). Give the corn one final toss and repeat cooking for additional 2-3 minutes until corn is charred on all sides. Turn off heat.

Add remaining ingredients and stir to incorporate. Add salt to taste. Serve immediately.

Cut the produce into large pieces that will fit through the feeding tube of a juicer. If you will be using a blender to make your juice, then cut your produce into smaller pieces than if you are using a juicer. If using a blender, you may also wish to remove the stems from the parsley.

If you are using a juicer

, then run the vegetable and fruit pieces through the juicer. Collect the juice and serve immediately.

If you are using a food processor or blender

, add the beets, dandelion greens, parsley, lemon, cucumber, and apple pieces to the base. Add 1 cup of water. Blend or process on high for 20-30 seconds, or until the mixture is smooth.

Then, pour the blended juice through a nut milk bag, squeezing it from the top down to drain the juice into a pitcher. Discard the collected pulp, or save it and use it for another purpose.

This one tastes great and makes me feel really good after drinking it.

These ingredients work so well together and make for a delicious way to achieve better health! I make a large batch of this juice 2-3 times per week and have it every morning either with or before breakfast. I use green apples to add the perfect amount of sweetness. So far I've seen an overall increase in energy and improvement in my digestive system, so thank you for this recipe!

Beet Juice

red beets, (peeled and diced)

gala

carrots, (peeled and diced)

lemon, (peeled and diced)

orange, (peeled and diced)

persian cucumber, (peeled and diced)

1- inch piece fresh ginger, (peeled)

Pinch of sumac, (about ½ teaspoon, optional)

Juicer method: Run the beets, apple, carrots, lemon, orange, cucumber, and ginger through your juicer. Pour and enjoy

Blender method: Add the beets, apples, carrots, citrus, cucumber, and ginger to your blender. Add 1 cup of water. Close the lid and blend on medium-high speed until everything is fully liquified. Strain through a fine mesh strainer before serving.

Great tasting and fabulous health benefits!  I made mine in the blender and now I’m wondering what to do with the purée that is left in the strainer. Any ideas?

What a treat! Love the spice of the fresh ginger. Replacing this for my pre-dinner coffee.

I made this tonight to have with breakfast tomorrow morning. However, I decided to try it after I made it as I have never had beets before... and now after having a couple of glasses, there is not much left! 
It has a slight earthy flavor, with a hint of sweetness from the apple and orange along with hints of lemon. It was amazing! I could not find my juicer so I used my blender and stained it twice using a fine mesh stainer - it worked beautifully!
