This beet salad recipe is just as pretty as it is delicious! I love to serve it when I&#039;m entertaining. If you want to get ahead, you can roast the beets and make the dressing up to 2 days in advance and store them in the fridge. Assemble the salad just before serving.

Beet Salad with Goat Cheese and Balsamic

beets

Extra-virgin olive oil (for drizzling)

salad greens (arugula or spring mix)

shallot (thinly sliced)

green apple (thinly sliced)

walnuts

goat cheese (torn)

Microgreens (optional)

Balsamic Vinaigrette

Flaky sea salt

black pepper

Preheat the oven to 400°F.

Wrap each beet in a piece of aluminum foil and drizzle generously with olive oil and pinches of salt and pepper. Place the beets on a baking sheet and roast for 40 to 90 minutes, or until soft and fork-tender. The time will depend on the size and freshness of the beets. Remove the beets from the oven, remove the foil, and set aside to cool. When they are cool to the touch, peel the skins. I like to hold them under running water and slide the skins off with my hands.

Let the beets cool and chill them in the fridge until ready to use.

Assemble the salad with the greens, shallots, apples, walnuts, cheese, and microgreens, if using. Drizzle with balsamic vinaigrette. Season with flaky sea salt and pepper and serve.

red beets,

avocado, chopped

navel oranges,

red onion

radishes, thinly sliced

Dijon mustard

Salt & pepper,

In a mixing bowl, whisk the dressing ingredients together until smooth. Set aside.

Combine salad ingredients in a large bowl and add dressing. Gently toss to coat the salad in dressing.

Before serving, top with roasted pepitas and adjust seasoning with salt and pepper, to taste.

horseradish

Whisk the mayonnaise, creme fraiche and horseradish (if using) together in a medium bowl.  Gently fold in beets, apple and parsley.  Add 1-3 tablespoons of the beet pickling juice until the salad has a lovely pink hue.  Season to taste with salt and pepper.  Cover and refrigerate until ready to serve.

beets (, trimmed, peeled + cut into 3/4-inch pieces)

+ 2 pinches table salt (, divided)

plain Greek yogurt

In the largest bowl your microwave will accommodate, stir together beets, ⅓ cup water, and ½ teaspoon salt. Cover with plate and microwave until beets can be easily pierced with a paring knife, 25 to 30 minutes, stirring halfway through microwaving. Drain beets in colander and let cool.

In a medium bowl, whisk together yogurt, finely chopped figs, 3 tablespoons cilantro, 2 tablespoons oil, ginger, lime zest and 1 tablespoon juice, garlic, cumin, coriander, pepper, and ½ teaspoon salt. Slowly stir in up to 3 tablespoons water until mixture has consistency of regular yogurt. Season with salt, pepper, and extra lime juice to taste. Spread yogurt mixture over serving platter.

In a large bowl, combine watercress, ¼ cup chopped figs, 2 tablespoons pistachios, 1 tablespoon oil, 2 teaspoons lime juice, and pinch salt and toss to coat. Arrange watercress mixture on top of yogurt mixture, leaving 1-inch border of yogurt mixture. Add beets to now-empty bowl and toss with remaining 1 teaspoon oil, remaining 2 teaspoons lime juice, and remaining pinch salt. Place beet mixture on top of watercress mixture. Sprinkle salad with remaining ¼ cup chopped figs, remaining 2 tablespoons pistachios, and remaining 1 tablespoon cilantro and serve.

Simple cold beet salad with a vinaigrette dressing. French Recipe.

Beet Salad Recipe

Beet

Salt (pinch)

Black Pepper Ground (pinch)

½ Teaspoon Vinegar (*see Notes)

Dijon Mustard

½ Tablespoon Oil (*see Notes)

Cook your beets soft. To boil beets, boil in with the skin until tender to the core. Allow to cool and peel.

Cut beets into dices and place into a salad bowl.

Combine dressing ingredients in a small bowl with a fork or place into dressing shaker.

Pour dressing over beets and mix it all in so that beet dices are coated with the dressing.

Loved it! I mixed in arugula and honey goat cheese. So yummy.
