Yogurt Sheet Pan Pancakes with Mixed Berries are an easy breakfast or brunch for the holiday season or any time of the year. Set out all the toppings and let your family serve themselves.

Yogurt Sheet Pan Pancakes with Berries

Cooking spray

all-purpose unbleached flour

white whole wheat flour

sugar

baking powder

baking soda

salt

Stonyfield Organic 0% plain yogurt

milk

water

eggs

unsalted butter (melted then cooled slightly)

vanilla extract

mixed berries (blueberry, raspberry, blackberry)

Move the oven rack to the middle position and preheat oven to 425 degrees F.

Spray a rimmed 18” x 13” sheet pan with cooking spray, this will keep the parchment in place.

Cut a piece of parchment paper to cover the bottom completely, about 16 x 20 inches. Place on the sheet pan and spray more oil on the parchment, and around the sides of the sheet pan.

In a medium bowl, whisk together dry ingredients (from flour to salt).

In another medium bowl, whisk together wet ingredients (from yogurt to vanilla) until thoroughly combined.

Transfer wet ingredients into the bowl with the dry ingredients and whisk until just combined.  Do not over mix (or worry if there are some lumps).

Gently fold in berries.

Pour the batter into the prepared baking sheet. Spread the batter evenly with a spatula then tap the sheet pan on the counter a couple times to settle the batter.

Bake for 15 to 17 minutes, rotating the pan halfway through.

Allow to cool for 5 minutes in the pan then, place a large cutting board over the top of the pan and flip the pancakes onto cutting board.  Cut into 16 squares and serve immediately.

Luscious Cream Cheese Pancakes with Fresh Berries

oz cream cheese

cinnamon

tbsps extra virgin olive oil (divided)

blueberries (fresh)

strawberries (fresh, sliced)

tbsps monk fruit (optional, powdered)

maple syrup (to serve)

Add cream

Add cream cheese, eggs, cinnamon, and vanilla extract to a high-powered blender.

cover and blend

Cover and blend on high until completely smooth.

Heat a cast iron griddle or large skillet over medium heat.

Once hot, add ½ tablespoon olive oil to griddle and spread around with a rubber spatula.

Pour 3 small pancakes onto the griddle (approximately 2-3 tablespoons each), leaving enough space in between so they don’t run together.

Cook until the edges just begin to turn brown and the pancakes are set, approximately 3-4 minutes.

These Vegan Blueberry Pancakes are light, buttery, perfectly sweetened, and studded with juicy blueberries. A wholesome, protein-packed start to any morning.

Vegan Blueberry Pancakes 

(100 g) blanched almond flour

sea salt

non-dairy milk (I used soy)

lemon

(150 g) fresh blueberries*

Make the Batter

add the oat flour, almond flour, baking powder, baking soda, and salt to a large bowl. Whisk until incorporated, then form a well in the center of the dry mix. Pour the milk, maple syrup, and vanilla into the bowl; mix until most clumps have dissolved. Set the bowl aside and let the batter rest for 5 minutes &#8211; this allows the flour to absorb more liquid, and results in fluffier pancakes. While you wait, heat a large nonstick pan or griddle to medium heat.

Fold in the Blueberries

and lemon juice to the batter and mix well; the lemon juice will react with the baking soda and create airy bubbles in the batter.

Cook the Pancakes

once your griddle or pan is warm*, use a 1/3 measuring cup (80 ml) to scoop the batter onto the pan; if you have room, I suggest making 2 to 3 pancakes at a time for maximum efficiency. Cook the pancakes for 4 to 5 minutes on medium heat, until the edges firm up and a few bubbles pop through the batter. Flip the pancakes, then cook for an additional 3 to 5 minutes. Repeat with the remaining batter

Serve

warm with a drizzle of maple syrup, or as desired. Leftovers will keep in the fridge for up to 5 days, or can be frozen for up to two months.

This pancake recipe is fantastic! I've never actually tried it with almond flour – I've been using 100g of dried almond pulp. It has been a fantastic way to use up my almond pulp after I make almond milk and the pancakes still taste delicious!

I make these pancakes for my friends at any time of the day and they are always a hit. I love the combination of the oats and almond flour, it gives it a cookie like taste and cake like texture. The lemon gives it a nice fruity touch. My favorite pancake recipe of all time!

Fabulous pancakes. I subbed all-purpose flour for the oat flour, and used mixed berries. Not sure what happened but my mixture was extremely dry, so I added more milk. Very easy to make. I made a third of the recipe since I was only cooking for myself, and was able to make two thick and delicious pancakes.

Made these for the first time today.  They turned out great.  I had oat flour so didn’t make my own as well as almond flour (not blanched). Not sure that made a difference but they turned out great.  I will freeze the rest and hope they reheat well.
