This Moroccan Chickpea and Sweet Potato Salad is awesome! Perfectly flavorful and made easily from ingredients I had on hand. Sautéed Chickpea Recipes are the simplest way to make pan fried chickpeas. A classic staple that’s budget-friendly and easy to prepare.

Sautéed Chickpea Recipes

tbsp Olive Oil

½ tbsp Garlic Powder

Paprika

tsp Ground Turmeric

Salt

⅛ tsp Black Pepper

Lemon

Parsley

Open canned chickpeas, rinse under running water then dry on a clean kitchen towel. Heat olive oil in a skillet/frying pan on medium heat.

Add chickpeas and sauteed until it turns golden crispy on the surface. Before adding the spices, turn the heat to very low to prevent spices burnt. Add ground turmeric, paprika, garlic powder, and salt. Mix until chickpeas are well coated (no more than 2-3 minutes to avoid burning the spices). .

Add lemon juice (optional, leave out if you prefer crispy texture) and stir.

Turning off the heat then finish it with chopped parsley. Serve as a side dish or with salad or rice.

With protein-rich chickpeas, wholewheat giant couscous, vibrant sweet potatoes and tomatoes, every spoonful is a nutritional powerhouse. Perfect for fuelling your active lifestyle, or simply for a comforting, delicious meal.

High-Protein Moroccan Inspired Chickpea Soup

Medjool Date

Red Onion

Carrot

Garlic Clove

Cinnamon

Cumin

Coriander

Chilli Flakes

Mushroom Broth

Sweet Potato

Drained Cooked Chickpeas

Tinned Chopped Tomatoes

Giant Couscous

Black Pepper

Pit the dates and finely chop them along with the garlic, onion and carrot

Add the onions and a generous amount of olive oil to a non-stick saucepan set over a low-medium heat. Cook until slightly translucent. Add the carrots and a pinch of salt, then cook for another 2 mins.

Add the garlic, spices and chopped dates with a splash of vegetable broth. Slowly sauté and stir this mixture for 8-10 mins until the onions and carrots are very soft.

Meanwhile, wash and chop the sweet potatoes. Drain the chickpeas.

Turn the heat to medium and add the sweet potatoes, chopped tomatoes, chickpeas, vegetable stock and giant couscous to the pan. Simmer until the sweet potatoes are fork-tender and the giant couscous is cooked (about 8-10 minutes)

Turn off the heat. Roughly chop the coriander and stir it through. Season with salt and black pepper, then squeeze the lemon straight into the pan.

Let the soup sit for 7-8 mins before serving.

Tasty, but definitely makes more than 2 portions!

Great dish! Can be even better by adding some aubergine. Top up with some yoghurt if you made it too spicy!
