Super easy Italian Pasta Salad - with pasta, tomatoes, fresh mozzarella, spicy salami, pepperoncini, olives, and easy Italian dressing. DANGEROUSLY GOOD.

The Best Easy Italian Pasta Salad

pasta

cherry tomatoes,

mozzarella cheese balls,

salami

kalamata olives, sliced

pepperoncini (optional, but do it)

red onion

fresh parsley, chopped

olive oil

white vinegar (white vinegar vinegar

water

coarse sea salt (yes, tablespoons – see notes!)

garlic garlic

sugar

dry oregano and dry basil

black pepper

herbs

Cook pasta according to package directions, in salted water for more flavor. Allow to cool slightly and toss with a little oil to prevent sticking.

Blend up the dressing, or shake together in a jar.

Toss all ingredients together! I like to use about three-fourths of the dressing, and then I save the rest of the dressing to add to my leftovers.

Keep in the fridge for 2-3 days. I think it actually tastes best the day AFTER you make it.

This Italian pasta salad sounds good. I find using bottled dressing helps to keep the pasta from absorbing too much of the oil but your dressing sounds delicious and you could just add it right before serving it. This is great for hosting parties or take along.

Served it at the new year party. Got many complement for the dish. Excellent salad.

A vibrant, flavor-packed orzo pasta salad that's perfect for picnics, parties and backyard barbecues.

Adapted from a recipe in Bon Appetit (1998) 

Out-of-This-World Orzo Pasta Salad Recipe

orzo pasta

extra virgin olive oil

balsamic vinegar

tomatoes

chopped, pitted Kalamata olives

garlic (3-4 large cloves)

pine nuts

radicchio,

arugula (about 3 ounces)

(loosely-packed) chopped fresh basil leaves

Kosher salt

Cook the pasta al dente (firm to the bite) in a pot of boiling water with teaspoon of salt. Drain orzo, transfer it to a large bowl, and immediately toss it, while it&#8217;s hot, with the oil (6 tablespoons), balsamic (6 tablespoons), sun-dried tomatoes (2/3 cup), olives (2/3 cup) and garlic (5 teaspoons). Set pasta aside to cool for 20-30 minutes before proceeding to step 2. Or cover and store in the fridge for up to 24 hours, and bring to room temperature before proceeding.

Once the pasta comes to room temperature, toss it with the rest of the ingredients: pine nuts (1 cup), radicchio (2 cups), arugula (1 1/2 cups), basil (1 cup) and parmesan (1 cup). Season with salt and pepper to taste. Serve at room temperature.

This pasta salad will keep for several days in the fridge but it&#8217;s at its best the day you make it, when the basil is bright green and the lettuces are crisp.

This is an amazing salad! Excellent use of radicchio. I made it last night to go along with the Aleppo chicken - it was outstanding! The BEST Pasta Salad

gluten free rotini pasta

Roma tomatoes, seeded then chopped

cucumber, peeled, seeded then chopped

pepperoni, chopped (Applegate Farms recommended)

can sliced olives, drained

Bring a large pot of water to a boil then add rotini and cook until tender. Drain then rinse under cold water until pasta is cold. Drain very well then add to a large mixing bowl.

To the cooled pasta add tomatoes, cucumber, pepperoni, black olives, 1/3 of the bottle of Italian Dressing, and 1/4 cup Salad Supreme Seasoning then mix to combine. Taste then add more dressing and/or Salad Supreme Seasoning if desired. Serve immediately or refrigerate for up to 2 hours.

Best Gluten Free Pasta Salad

Italian pasta salad is delicious, wholesome, and easy to make. Make it up to three days ahead for your summer picnics and cookouts. 

Italian Pasta Salad

pasta,

salami (about 80 grams)

grape tomatoes (1 pint), halved

green bell pepper, chopped

1/2 red bell pepper, chopped

red onion, chopped

kalamata black olives, halved

oz. bocconcini mozzarella balls, halved

Italian dressing, homemade

Parmesan cheese, grated (optional, for serving)

Bring a medium pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes or according to package instructions. Drain and rinse pasta under cold water to stop the cooking process and to cool the pasta down.

Transfer the pasta to a large mixing bowl or serving bowl. If not assembling the salad immediately, add some olive oil and toss together to prevent the pasta from sticking together. Otherwise, add remaining ingredients. Pour Italian salad dressing on top, and toss to combine.

You can serve immediately with Parmesan on top, or cover the bowl tightly with plastic cling wrap and refrigerate for at least 2 hours. This will allow all the flavours to infuse into each other. When ready to serve, give the salad a good toss and add a little more dressing, if desired.

Yum!! I substituted the red bell pepper with cucumber, kalamata olives with black olives, mozzarella with feta cheese. I used your homemade Italian dressing recipe, but I didn’t have wine vinegar either so I used plain rice vinegar and balsamic vinegar. I just used what I had on hand and it still turned out amazing! 😄
