This red lentil stew is reminiscent of the flavors of dal—packed with potatoes, turnips, carrots, red lentils, and flavorful herbs and spices, you can get this dish on the table in 45 minutes with a few pantry ingredients.

Place water and tomatoes in a large pot and bring to a simmer.

Add vegetable bullion cube, onion, celery, carrots, turnips, garlic, red lentils, smoked paprika, turmeric, and cumin. Stir well, cover, and cook over medium heat for about 30 minutes, until vegetables are just tender.

May need to add additional water to replace water lost to evaporation. Should make a thick, hearty stew.

Easy Stovetop Chicken and Rice Soup Recipe

When life gives you carrots, make vegan carrot soup! Vegan carrot soup is a melody of savory roasted vegetables and cashews for a melt-in-your-mouth creamy soup.

Vegan Roasted Carrot Soup

carrots ((about 6 carrots) peeled and coarsely chopped)

garlic (minced)

celery (chopped)

red onion (about 1/2 cup chopped)

raw cashews

red bell pepper (chopped)

Tablespoons Soy sauce (or Tamari)

Dijon Mustard

Tablespoons fresh dill (chopped)

sea salt

organic vegetable broth

dill (chopped)

parsley (chopped)

carrot

Pre-heat the oven to 400 degrees.

Chop all vegetables (ingredients 1-6) and put them in a large bowl with cashews.

In a small bowl or measuring cup, add dijon mustard, soy (tamari), dill, and seasonings.

Whisk together and pour over raw vegetables.

Stir the dijon/soy mixture into the vegetables.

Then, pour the coated vegetables into a casserole pan, and cover.

DO NOT ADD THE VEGETABLE BROTH.

Bake (roast) for 1 hour.

Remove from the oven, and remove the cover.

Let cool completely.

Add cooled roasted vegetables/cashews to a high-speed blender and add 4 cups of the vegetable broth. Or, blend in small batches; 1 cup roasted vegetables and 1 cup vegetable broth at a time.

Blend until smooth.

Transfer to a soup pot, and add the additional 2 cups of vegetable broth.

Heat on medium-low until hot and ready to serve.

Garnish with grated carrots, parsley, and dill.

Rotisserie Chicken Tortilla Soup (Family Friendly)

rotisserie chicken (2-3 cups, meat shredded)

jalapeño (seeds removed, finely chopped)

chili powder

28 oz crushed tomatoes

14 oz corn (1 1/2 cups frozen)

14 oz black beans (drained & rinsed)

lime (juiced)

cilantro (chopped)

Toppings for serving: tortilla strips and sliced avocado

Pull the meat from 1/2 a rotisserie chicken and shred it into smaller pieces. You&#39;ll need 2 cups, can add more or reserve for another meal.

Prep:

In a large pot over medium heat, heat oil. Add the onion, garlic, and jalapeño, and cook, stirring, until the onions are soft and translucent, about 3 minutes. Add the chili powder and cumin and stir for a minute to toast the spices.

Add crushed tomatoes, with the liquid, into the pot and stir while cooking for about 3 minutes until they come to a simmer. Add the cooked chicken, the corn, and black beans, and stir.

Add the chicken broth and water to the pot and bring everything to a boil. Reduce the heat and simmer for 15 minutes, covered.

Cook:

Add the juice of 1 lime and chopped cilantro into the pot and stir to combine.

Ladle the soup into bowls and top with a handful of tortilla strips and sliced avocado.

Serve:

Refrigerate leftovers for up to 4 days or freeze in airtight containers for up to 3 months.

My family loves chicken tortilla soup. The little is very spice adverse as am I so I always lower the heat level, but it is biweekly meal at our house.
