To get great results from this recipe you need to ferment your dough perfectly at every stage. You also need to handle the dough delicately to conserve as much of the air as possible.&amp;nbsp;Don&#39;t go over on the bulk fermentation.Don&#39;t rush the final proof after cutting the dough. When they are extremely airy and wobbly, and a poke test leaves a small indent after a slow bounce back then they are ready to bake.&amp;nbsp;For best results you need the conductive heat power from a preheated baking steel. A large dutch oven will also work to some degree.&amp;nbsp;All of the above will contribute&amp;nbsp;to the right shape and texture of the final bread.It is very important that the Motherdough is active and healthy for this recipe – it should also not over ferment when fed. If you are not convinced that your culture in in peak condition give her a bath and or feed twice before making this dough.&amp;nbsp;

Motherdough Ciabatta 

refreshed Motherdough

White bread flour

Semolina (fine

Water

Olive oil

Salt

Mix the semolina, flour and water to a shaggy mess and set aside to autolyse.

Feed your Motherdough and leave until ripe &amp;amp; ready to use.

When the mother is ready, add to the autolyse mixture and knead to incorporate on a low speed.

Mix on medium speed until the dough is well mixed, but not completely clearing the bowl.

Let the dough rest for about 15-20 minutes, then add the salt.

Knead slowly for the first minute, then increase to medium high speed until the dough clears the bowl. The ideal dough temperature at the end of kneading is 26ºC.

Put the dough into an oiled container large enough to hold double its volume, and a shape that allows you to correctly assess the condition of the dough and its increase in volume. Rectangle or square containers work best.

Move it to prove at 26-27 ° C for about 2-3 hours - more if it&#39;s cooler. Do a coil fold every 30 minutes (total of 4). (see notes below)

Place the dough in the refrigerator at 6° C, closed with a lid or cling film for at least 12 hours. Do not let the dough go behind double its volume in while resting in the fridge. If this happens before 12 hours, move onto the next step or shorten the times in subsequent steps.

Take the dough out of the refrigerator after 12 hours. If it is still behind, leave it on the work surface until it reaches about + 90% in volume. If it is already at this level, however, leave it at room temperature for about 30 minutes to allow it to acclimatise. Avoid this bulk rest only if it has already gone beyond the double rise.

Generously dust the work surface with semolina flour, and pour the dough over it. Leave the dough to rest and relax, while the surface dries a little.

Sprinkle the surface of the dough spread out on the work surface abundantly with semolina flour. It must be completely covered. And keep more flour on hand for the cutting phase.

Prepare some sheets of parchment paper or plastic sheets on a board They should be long and wide enough for the slipper shape of the dough. Dust liberally.

To get equal loaves or rolls, use semolina flour in your hand to create &quot;lines&quot; across the dough to indicate where you will cut.

Cut to shape. As you cut, cut in the middle of the semolina &quot;lines&quot; so it falls into  in the cut. This ensures that the whole &quot;dough&quot;, including the sides, is dusted.

With the help of the dough cutter, gently lift the cut piece of dough and transfer it to the parchment paper. Use the weight of the dough and pull your hands from the middle, outwards to stretch the dough length wise. Be gentle, don&#39;t deform or deflate the dough. 

Leave them to prove until they pass the poke test. 

Preheat oven to max 230ºC, the baking steel or dutch oven need to be really hot.

Place in oven at 230 deg C with lots of steam for 10 minutes. 

Reduce heat to 170 deg C. for a further 15 minutes.

Una ricetta che per chi ama il pane e i panini non può assolutamente farsi scappare. Il risultato finale sarà profumato, croccante e saporito.

Ricetta per l'Impasto della Ciabatta di Pane

250 g Acqua

250 g Farina 0 W350>

150 g Farina 0 W260

g Farina Tipo 1

g Lievito Secco di Birra

752 g L'Impasto della Biga

200 g Farina Tipo 1

g Sale fino

g Malto diastasico

g Lievito secco di Birra

q.b. Semola Rimacinata

Iniziamo con il preparare il giorno prima la Biga. Mescoliamo in una ciotola tutti gli ingredienti aiutandoci con una forchetta. Cerchiamo di far inglobare tutta la farina nell&#39;acqua, però senza far formare la maglia glutinica. L&#39;impasto alla vista si mostrerà molto grezzo e appiccicoso. A questo punto lo possiamo traferire in un contenitore con il coperchio e farlo riposare a 16°-18°C per 15-16 ore.

Preparazione della Biga:

Dopo la Biga è pronta possiamo procedere con l&#39;impasto vero e proprio. Inseriamo dentro la planetaria la Biga spezzettata, poi aggiungiamo la farina, il malto d&#39;orzo diastasico e il resto del lievito in polvere. Aggiungiamo un po&#39;di acqua alla volta, ne lasciamo poca da parte. Quando l&#39;acqua sarà stata assorbita e si sarà formata la maglia glutinica, aggiungiamo il sale e poi la restante poca acqua. In questo modo ci assicureremo che il sale si distribuisca omogeneamente all&#39;interno dell&#39;impasto. Quando l&#39;impasto sarà pronto, possiamo rovesciarlo sul banco di lavoro; lo si può notare quando inizierà a dare degli schiaffi sul bordo della planetaria e l&#39;impasto tenderà a salire sul gancio a uncino. Mi raccomando di rimanere su una velocità media.

Inseriamo la Biga a pezzi, preparata il giorno prima, dentro la planetaria. Procediamo con la farina setacciata, il malto d'orzo, il restante lievito secco e l'acqua a filo, tenendone un pochino da parte. Quando l'impasto avrà formato la maglia glutinica possiamo inserire il sale e poi la restante acqua. Quando l'impasto inizierà a schiaffeggiare la planetaria vuol dire che l'impasto é pronto e possiamo trasferirlo sul piano di lavoro. Impastiamo a velocità media.

Preparazione dell'Impasto per le Ciabatte di Pane

Preparazione dell&#39;Impasto:

Dopo aver rovesciato l&#39;impasto sul piano di lavoro, procediamo allargandolo con le mani evitando di rompere la maglia glutinica; lasciamo riposare 5 minuti per far asciugare bene l&#39;impasto. A questo punto procediamo con delle pieghe a tre, facendo una leggera pirlatura; poi copriamo e lasciamo riposare a temperatura ambiente per 20 minuti. Ripetiamo queste operazioni altre due volte. A questo punto facciamo un paio di pieghe per dare tenacità, chiudiamo con una buona pirlatura e facciamo lievitare dentro un contenitore leggermente oliato; fino al suo raddoppio, ci vorranno circa 2 ore.

Dopo aver rovesciato l'impasto sul piano di lavoro, lo allarghiamo e lo lasciamo asciugare per 5 minuti. Poi effettuiamo delle pieghe a tre e una leggera pirlatura; copriamo per 20 minuti. Ripetiamo l'operazione massimo altre due volte. Dopodiché un giro di pieghe e un'ultima pirlatura, inseriamo l'impasto in un contenitore leggermente oliato e copriamo. Lasciamo lievitare fino al suo raddoppio, circa due ore.

Puntatura e 1° Lievitazione

Pieghe, Pirlatura e Puntata:

Quando l&#39;impasto sarà lievitato, rovesciamolo sul piano di lavoro coperto di semola rimacinata; copriamo con altra semola abbondante la parte superiore dell&#39;impasto. A questo punto con il tarocco ricaviamo le nostre ciabatte, del peso desiderato, aiutiamo con le mani per dare la forma desiderata. Adagiamole a teste in giù su delle teglie coperte da carta da forno e copriamo il tutto con un panno umido. E lasciamole lievitare per altri 30-45 minuti. In questo modo la C02 sviluppata durante la lievitazione sarà distribuita in maniera omogenea.

Dopo la 1° Lievitazione, rovesciamo l'impasto sul piano di lavoro coperto di semola rimacinata. Spolveriamo anche la parte superiore e con il tarocco procediamo al taglio e formazione dei panetti delle ciabatte. Che andremo a riporre su delle teglie coperte da carta da forno, ma a testa in giù. In modo che la co² si distribuisca uniformemente all'interno del panetto. Lasciamo lievitare per 30-45 minuti coperte da un panno umido.

Staglio e 2° Lievitazione delle Ciabatte di Pane

Staglio e Appretto:

Avvenuta la seconda lievitazione li facciamo cuocere nel forno preriscaldato in modalità statico a 230°-240°C per 20-25 minuti. I primi dieci minuti con un pentolino pieno di acqua per creare l&#39;effetto vapore; i restanti minuti invece senza il pentolino. In modo che all&#39;inizio con il vapore faremo sviluppare e gonfiare le ciabatte; mentre con i restanti formeremo una bella crosticina croccante. Terminata la cottura rimuoviamo dal forno e adagiamo su una griglia per farle raffreddare e rimuovere tracce di umidità. A questo punto possiamo goderci le nostre ciabatte tagliandole a fette o aprendole a metà per farci un bel panino.
