(Triple) Biscoff Stuffed Protein Cookie

Tbsp Cookie Butter Spread (16 grams, sugar-free recommendation below)

2½ Tbsp Oat Flour (14 grams, see post for subs)

Biscoff Biscuit (8 grams)

1½ Tbsp Vanilla Protein Powder (Whey-casein, 8 grams)

Tbsp Unflavored Protein Powder (Whey-casein, 6 grams)

Tbsp Peanut Butter Powder (6 grams)

Tbsp Non-fat Plain Greek Yogurt (14 grams)

Tbsp + 2 tsp Unsweetened Almond Milk (25 milliliters)

¼ + ⅛ tsp Baking Powder

Spread Biscoff cookie butter on parchment lined plate in small circle and place in freezer for 15-20 mins.

Preheat oven to 350°F and line a baking sheet with parchment paper.

Combine dry ingredients in a bowl - oat flour, crushed biscoff biscuit, vanilla protein powder, unflavored protein powder, peanut butter powder and baking powder.

Add in Greek yogurt and almond milk (little at a time).

Transfer ½ cookie mixture onto baking sheet, spread with spoon and shape.

Place cookie butter in the middle. Cover with remaining cookie mixture and shape.

Bake about 10 minutes - top should be cooked and dry to touch.Let cool for a few minutes and enjoy!

Biscoff Protein Bars - Easy, Healthy, Sugar Free!

½ scoop Vanilla Protein Powder (Whey-casein, 15 grams)

Biscoff Cookies (Crushed, 16 grams)

Oat Flour (30 grams)

Tbsp Coconut Flour (14 grams)

Tbsp Unsweetened Almond Milk (45 milliliters)

Cookie Butter Spread (64 grams,Sugar-free recommendation below)

Tbsp Vanilla Protein Powder (Whey-casein, 6 grams)

Tbsp Unflavored Protein Powder (Whey-casein, 15 grams)

1½ Tbsp White Chocolate Chips (Sugar-free recommended below, 21 grams)

⅛ tsp Coconut Oil

Biscoff Cookie

Line an 8x4” loaf pan with parchment paper; leave an overhang to lift out later.

Combine dry ingredients in a bowl - crushed biscoff biscuit, vanilla protein powder, unflavored protein powder, oat flour and coconut flour.

Add in milk - little at a time - and mix. Mixture will be like a dough.

Transfer to prepared pan and press down.

Base:

In the same bowl, stir Biscoff cookie butter, vanilla protein powder, unflavored protein powder and coconut flour to form a thick mixture.

Spread on top of base and use back of spoon/spatula or fingers to smoothen.

Protein Biscoff:

Place chocolate chips in a bowl, add in a bit of coconut oil, and place over a bowl of boiling water. Stir until melted.

Spread chocolate on bar and use back of spoon to smoothen.Top with crushed biscoff cookies.

Transfer to freezer to cool about 5-10 minutes.

Lift layers out of pan, place on cutting board and using a warmed sharp knife, slice into 8 bars.
