Note: make your own pumpkin pie spice by mixing 2 tablespoons cinnamon, 1 tablespoon ginger, 1 tablespoon nutmeg, and ½ tablespoon cloves; use 2 teaspoons in the dough, and 3 tablespoons in the topping mixture.

In a large bowl, mix together flour, sugar, baking powder, pumpkin pie spice, and salt.

In a separate bowl, mix together pumpkin puree, egg, and butter.

Pour wet mixture into dry mixture and stir together with rubber spatula until fully incorporated. Set aside.

Heat oil in a frying pan to 325˚F (160˚C).

While oil is heating, use your hands to shape and roll the pumpkin donut dough into balls. (Greasing your hands with oil will make this process much easier).

Fry the dough balls until golden brown, about 4-5 minutes. (For best results, fry only 3-4 at a time).

Drain them on a paper towel and immediately transfer to bowl of the pumpkin pie spice-sugar mix. Gently toss to coat.

Preheat the oven to 375 degrees F (190 degrees C). Line a cupcake tin with crescent roll dough triangles as pictured.

Add the veggies and tofu (if using) to the gravy and let them cook for 5 minutes. Spoon the gravy vegetable mixture into the dough triangles and wrap the dough, as pictured.

Bake for 10-12 minutes until golden. Remove from the oven and let sit for five minutes to firm up.

These mini chocolate treats are perfect for a party! Enjoy gluten free brownie bites plain, or topped with berries and chocolate.

dairy free 100% cacao chips

vegan buttery spread

organic cane sugar

cocoa powder

Tablespoons unsweetened applesauce (or beet puree)

dairy free chocolate chips

strawberries (finely chopped)

Preheat oven to 350 degrees. Grease a mini muffin tin with a little vegan buttery spread.

Place the 1/2 cup of 100% cacao chocolate chips in a large microwave safe bowl and heat for one minute. Stir, then heat in 10 second increments until melted.

Add the vegan buttery spread to the hot chocolate chips and stir until melted.

Add the sugar, cocoa powder, and applesauce, and stir. Add the gluten free flour and salt, and stir again. The batter will be very thick. If your batter is way too dry, add a little more applesauce.

Put the batter into 18 wells of the muffin tin. Use the back of a spoon to smooth them out - the batter should reach the top of each well.

Bake at 350 degrees for 14-16 minutes. Allow to cool in the pan for 10 minutes, then overturn the pan onto a cookie sheet and tap the bottom to remove the brownie bites.
