Either roast the bell peppers over the flame on your stovetop, or on a sheet pan in the oven for 10 minutes at 360°F (180°C), then place under the broiler for a few minutes peel side up.

Remove from the sheet pan, and place in a bowl and cover with plastic wrap. The bell peppers will &quot;steam&quot; for 10-15 minutes, and will become easier to peel. When they&#039;re cool enough to handle, peel them and place in a food processor.

Add the rest of the ingredients to the food processor, and blend until it&#039;s a smooth paste.

Transfer to a bowl, and serve with a drizzle of extra virgin olive oil, extra walnuts, fresh herbs, and pita bread or chips.

High Protein Black Bean Lime Dip

1 inch ginger, fresh ((1 inch = 2.5 cm))

black beans ((1 can = 15.5 oz; 435 grams))

Grate or chop the garlic and ginger. Then fry both in oil on a medium heat and in a large saucepan for a minute or two. Don’t let it burn!

Drain and rinse the black beans, then add them to the pan.

Fry for a couple more minutes, adding a couple of tablespoons of water as you go.

Finally, remove from the heat, add the salt, pepper and lime juice.

Smoky Jalapeno Black Bean Dip

black beans, drained and rinsed well

(75 grams) finely chopped red bell pepper

I really recommend storing this in the fridge a few hours or the day before serving, because while you can serve it immediately, it really tastes even better the next day after all the flavors have soaked into the beans and mellowed out perfectly.

First, drain and rinse your beans well. Add them to a food processor.

Add your bell pepper and onion and 3 tablespoons water to a small pan and turn the heat to medium-low. Let it cook about 5 minutes and add the garlic and cook a couple of minutes more. Everything should be softened by about 8 minutes. If necessary, add just a tiny bit more water to keep it cooking but all the water should be completely gone before adding it to the beans.

Add the cooked veggies, lime juice, salt, pepper, cumin and liquid smoke to the processor and process until smooth, scraping the sides a couple of times as needed. I got mine smooth, but still left a few bites of the red bell pepper showing through. Process as smooth as you like.

Add the chopped jalapeno and process just a few seconds more until blended in. I used a heaping tablespoon, but if you are sensitive, start out with less and add more until desired heat level. I found 1 tablespoon to be a nice taste of heat, without being overpowering. Taste and add anymore salt/spices or liquid smoke if desired. I did not.

Store for a few hours before serving to really let the flavors settle.

Garnish with extra chopped jalapeno, raw bell pepper (for crunch) and lime wedges.

This dip can be made in 5 minutes! Serve with tortilla chips, veggies, or crackers for an easy appetizer or healthy snack.

In a large skillet, heat the 2 tablespoons vegetable oil or bacon fat over medium heat. Add the chopped ½ cup yellow onion and 1 jalapeño (if using) and cook, stirring occasionally, until softened and lightly golden, 4–5 minutes.

Stir in the minced 3 cloves fresh garlic and cook for 30 seconds, just until fragrant. Add the 1 teaspoon ground cumin, 1 teaspoon chili powder, and ½ teaspoon smoked paprika. Cook another 1 minute, stirring constantly, to toast the spices.

Stir in the drained 2 (15-ounce) cans black beans and about ½ cup of the reserved bean liquid. Bring to a gentle simmer.

Using a potato masher or the back of a large spoon, mash the beans in the skillet until thick and creamy, leaving some beans whole if you like a chunkier texture. Add more reserved liquid, a splash at a time, until the beans are the consistency you want.

Stir in the 1/2 teaspoon coarse kosher salt, ¼ teaspoon freshly ground black pepper, 1-2 tablespoons fresh lime juice, and chopped 2-3 tablespoons chopped fresh cilantro, if desired. Do a quick taste test and adjust the seasoning, add more salt, lime, or spices as needed. If the beans are too thick, stir in a bit more liquid; if too thin, keep cooking over medium-low heat, stirring often, until thickened.

Before serving, top with crumbled queso fresco and any additional toppings you like, and serve warm as a dip, side dish, or filling for tacos, burritos, quesadillas, or bowls.
